“Soto Betawi” (Bilingual Eng-Indonesia)

One of many Indonesian culinary icons, Soto Betawi has know originally from West Java. It has savory taste completed with special chips, sliced tomato and sambal. One thing major in this recipe is the soup itself, it compound of coconut milk and basic soto soup. Here is the simple recipe for it.

(Coba bikin soto betawi sendiri yuk di rumah, lebih higienis dan lebih terjami kualitasnya. Untuk bumbu dasar aku pakai bumbu dasar kuning, dikombinasi sama santan segar. Yuk bikin sama-sama.)

Ingredients:

  • 5 garlic (bawang putih)
  • 8 small shallots (bawang merah)
  • 5 candle nuts (kemiri)
  • 3 cm of fresh turmeric –> peel slightly burn it on fire a bit (kunyit –> bakar)
  • 3 cm of ginger (jahe segar)
  • 2 cm of galanga (lengkuas)
  • 1 teaspoon of coriander seed (ketumbar)
  • 1/2 teaspoon of cumin (jintan)

BLEND THE INGREDIENTS ABOVE MAKING SMOOTH PASTA and slightly stir fry until fragrant (Haluskan bahan-bahan diatas untuk membuat bumbu soto dan tumis hingga harum)

  • 1 kg of beef brisket (daging sapi)
  • 2 key lime leaves (daun jeruk)
  • 1 bay leaf (daun salam)
  • 2 lemongrass –> bashed (serai –> geprak)
  • salt and pepper (garam dan merica secukupnya)
  • 2 liters of medium coconut milk (santan)

Condiments (Pelengkap):

  • fried onion (bawang goreng)
  • some chopped green onion (daun bawang)
  • chili blend (sambal)
  • Indonesian sweet soy sauce (kecap manis)
  • sliced tomatoes (tomat diiris)
  • “emping”

Steps:

  1.  Heat pot on MEDIUM, put some oil and stir fry smooth blended spices until fragrant and put in the beef. Put in lime leaves, bay leaf, lemongrass and salt and pepper. Pour coconut milk and mix well. Put on the lid and cook until the beef tender and cooked well for about 1 hour. (Panaskan panci dan tuang minyak, tumis bumbu halus dan daging sapi. Tuang santan dan masak dengan api MEDIUM dan masukkan daun jeruk, daun salam dan serai. Taburi garam dan merica secukupnya. Masak selama 1 jam atau lebih hingga daging empuk.)
  2. Serving the Soto: Take one bowl, pour the BOILING soup together with the beef, sprinkle with green onion and fried onion. Serve together with “emping” and sliced tomatoes. (Menyajikan soto: ambil sebuah mangkuk tuang kuah MENDIDIH beserta dagingnya. Beri potongan daun bawang dan bawang goreng. Sajikan bersama keripik emping dan potongan tomat.)
  3. You can add sweet soy sauce and chili blend on the top. Enjoy! (Bisa ditambahkan kecap manis dan sambal jika suka. Selamat menikmati.)
