Peking Duck “Bebek Peking” (Bilingual Eng-Indonesia)

I waited 3 days for enjoying this super succulent delicious Peking Duck. Well, everyone knows that we have to hang dry the duck to make the skin dry and crusty at the end of the roasting. Here is the simple recipe for it.

(Teman-teman, hari ini aku belajar bikin Peking Duck sendiri, bebek panggang ala Peking ini memang tersohor dimana-mana, salah satu ikon Chinese Food juga. Ini resepnya ya.)

Ingredients:

  • 1 Whole Young Duck (bebek muda 1 ekor)

Rubbing Sauce (Bumbu Oles):

  • 1 tablespoon of soy sauce (kecap asin)
  • 1 tablespoon of oyster sauce (saus tiram)
  • 1 teaspoon of Chinese 5 spice powder (bubuk Ngo Hiong)
  • salt and pepper (garam dan merica sesuai selera)

Bathing Spices (Bumbu untuk memandikan bebek):

  • 3 tablespoons of soy sauce (kecap asin)
  • 3 teaspoon of Chinese 5 spice powder (bubuk Ngo Hiong)
  • salt and pepper (garam dan merica sesuai selera)

Steps:

  1. Get rid of the fat around the duck’s but, rub the cavity with rubbing sauce. (Buang lemak pada bagian pantat bebek dan olesi bagian rongga dalam bebek dengan bumbu oles. Tutup bagian ujung rongga dengan tusuk sate hingga rapat.)
  2. Boil 2 liters of water and put in bathing spices. Stir eventually. (Didihkan 2 liter air dan masukkan bumbu untuk memandikan bebek.)
  3. Bath the duck with the stove on for 5 minutes. Set aside for 30 minutes and hang dry it inside the fridge for 2 days. (Mandikan bebek dengan api kompor tetap menyala selama 5 menit. Sisihkan selama 30 menit dan gantung bebek supaya kering dalam lemari es selama 2 hari.)
  4. After 2 days, take out the duck and dry in open air for 3 hours. It will bring it to room temperature, ready to roast. (Setelah dua hari, keluarkan bebek dan angin-anginkan selama 3 jam, sekaligus menaikkan suhu bebek menjadi suhu ruang sehingga siap dipanggang.)
  5. Heat oven in 180 C. Roast the duck with aluminum foil covering for 30 minutes. After 30 minutes, take off the foil and continue roasting for 30 minutes or until the duck cooked well. (Panaskan oven 180 c. Bungkus bebek dengan aluminum foil dan panggang selama 30 menit. Setelah 30 menit, buka aluminum foil dan lanjutkan memanggang selama 30 menit atau hingga bebek matang.)
  6. Set the Grill type on the oven 200 c. Grill each side of the duck for 5 minutes. Take out and cut the butt seal, hang again for another 30 minutes. (Panaskan Api Atas Oven 200 c. Panggang 2 sisi bebek masing- masing 5 menit hingga kecoklatan. Matikan oven dan potong ujung pantat yang dijahit tusuk sate dan ganging bebek selama 30 menit.)
  7. Cut to preference. Enjoy! (Potong sesuai selera dan sajikan segera.)
