Indonesian Ribs Sour Soup “Sup Asam Iga” (Bilingual Eng-Indonesia)

My typical favorite dish, sour and savory. Here is my style Indonesian Ribs Sour Soup. It is full of spices and so delicious. Super easy to make and taste wonderful. Here we go!

(Teman-teman yang suka makan asam-asam Iga, coba bikin sendiri di rumah yuk, caranya gampang dan bisa masak puas-puas harga murah, harga di restoran cenderung mahal dan porsinya sedikit.)

Ingedients:

  • 1 kg beef ribs –> sliced (iga sapi –> iris sesuai ruas)
  • 2 tablespoons of lime juice (perasan jeruk nipis)
    • 5 cloves of garlic (bawang putih)
    • 3 cloves of shallots (6 butir bawang merah)
    • 5 candle nuts (kemiri)
    • 3 lime leaves (daun jeruk)
    • 1 lemongrass (serai/sereh)
    • 3 cm of fresh turmeric (kunyit segar)
    • 2 teaspoons of coriander seeds powder (ketumbar)
    • salt and pepper (garam dan merica bubuk)
    • 2 tablespoons of vegetable oil (minyak sayur)
    • 2 tomatoes –> sliced (tomat –> iris-iris)
    • some tamarind –> scrap some of the skin (asam Jawa –> kerok kulitnya)
    • 500 ml of water (air putih

      Steps:

      1. Place the ribs in a big bowl, pour in lime juice and sprinkle little salt. Mix well and store closed in the fridge for 2 hours. (Letakkan iga dalam mangkuk besar dan lumuri dengan air jeruk nipis dan bubuhi sedikit garam. Aduk rata. Tutup mangkuk dan letakkan dalam lemari es selama 2 jam.)
      2. Blend together the garlic, shallots, candle nuts, turmeric, and coriander seeds powder. (Haluskan bersama bawang putih, bawang merah, kemiri, kunyit segar, dan ketumbar.)
      3. After 2 hours, heat a pan on MEDIUM. Pour in the vegetable oil and stir fry the smooth spices blend until fragrant. (Setelah 2 jam, panaskan wajan dengan api medium. Tuang minyak sayur dan tumis bumbu halus hingga wangi sekali.)
      4. Put in the ribs and mix well. Pour in the water and season with salt and pepper. Put in lime leaves, lemongrass, and tamarind. (Masukkan ayam dan aduk rata. Tuangkan air dan bumbui dengan garam dan merica. Masukkan daun jeruk dan serai/sereh dan asam Jawa.)
      5. Cook the ribs on MED heat (with lid on) until they are cooked well and the water reduced. For about 1 hour. (Masak ribs dengan api Sedang panci TERTUTUP hingga matang betul dan air menyurut. Kurang lebih selama 1 jam.)
      6. After cooked. Set aside closed for 1 hour. (Setelah matang, matikan api dan biarkan ribs dalam panci selama 1 jam.)
      7. Boil the soup before serving, put in sliced tomatoes. Enjoy (Didihkan sup sebum disajikan, beri irisan tomat. Selamat menikmati.)
