Indonesian Banjar Meat Skewers “Sate Banjar” (Bilingual Eng-Indonesia)

One of hubby’s fave food, Sate Banjar, means Banjarmasin traditional meat skewers. It comes out good with pork and chicken. Here I used pork and chicken at once. Super delicious and addictive. Here is the simp recipe for it.

(Teman-teman, bikin sate Banjar yuk, sate yang satu terkenal dengan bumbu merah nya yang segar. Lain dari yang lain. Untuk resep ini aku gunakan sedikit saus tomat. Yuk, cobain ya..)

Ingredients:

  • 500 grams of chicken/ pork  –> diced (daging ayam/ babi juga boleh –> potong dadu kecil)
  • 3 cloves of garlic (bawang putih)
  • salt and pepper (garam dan merica secukupnya)
  • 2 tablespoons of sweet soy sauce (kecap manis)

Sauce (saus merahnya):

  • 10 small red jalapeño (cabe merah besar)
  • 5 garlic (bawang putih)
  • 50 ml tomato ketchup (saus tomat botolan)
  • salt and pepper (garam dan merica)
  • some sugar (gula secukupnya)
  • 150 ml of chicken stock (kaldu ayam)
  • 1 teaspoon of butter (butter)

Steps:

  1. Mince the garlic, mix with sweet soy sauce, salt and pepper. Marinade the chicken/ pork for 1 hour. Then, skew the meat until done.(Haluskan bawang putih, campur dengan kecap manis, garam dan merica. Lumuri ayam/babi dengan bumbu halus dan diamkan 1 jam. Tusuk dengan tusuk sate.)
  2. Making the sauce: Boil together the red jalapeño and garlic until soft. Drain and blend smooth. Cook on MEDIUM heat the smooth sauce together with chicken stock, tomato ketchup, salt, pepper and sugar. (Membuat sausnya: Rebus cabe merah besar dan bawang putih. Haluskan dan campur dengan kaldu ayam, garam, gula, merica, saus tomat dan masak hingga mendidih dengan api MEDIUM.)
  3. When the sauce is boiled hot, blend in the butter and melt completely for minutes. (Ketika saus sudah mendidih, masukkan butter dan aduk rata beberapa menit.)
  4. Grill the skewers and when they’re done on both sides, brush the meat both sides with the sauce. Grill for 1 more minutes. (Bakar satenya hingga kedua sisi matang, lumuri dengan saus dan bakar lagi selama 1 menit bolak-balik.)
  5. Serve the skewered meat together with the rest of the sauce. (Sajikan sate bersama sisa bumbu nya.)
