“Sop Kikil Sapi” (Bilingual Eng-Indonesia)

Super yummy soup which is very popular in Indonesia. Meet Sop Kikil Sapi. It’s basically beef ankle or beef tendon soup with coconut milk base and lot of spices. Here is the recipe for it.

(Teman-teman, ini ak share resep untuk bikin Sop Kikil Sapi di rumah ya, aku masak pake pressure cooker selama 6 jam slow cook, hasilnya luar biasa lembut dan meresap bumbunya. Sajikan sama lontong dan bawang goreng, plus jeruk nipis dan sambal. Yuk, bikin bareng-bareng!)

“Srupuuuutt….sedapnya lontong kikil”

Ingredients:

  • 1 kilo of beef tendon –> cut chunk (otot sapi –> potong kotak)
  • 2 tablespoons of lime juice (perasan jeruk nipis)
  • 4 cloves of garlic (bawang putih)
  • 5 cloves of shallots (6 butir bawang merah)
  • 3 candle nuts (kemiri)
  • 6 small red Jalapeño (cabe merah besar)
  • 3 lime leaves (daun jeruk)
  • 2 bay leaves (daun salam)
  • 2 lemongrass (serai/sereh)
  • 3 cm of galangal (lengkuas)
  • 3 cm of fresh turmeric (kunyit segar)
  • 2 teaspoons of coriander seeds (ketumbar)
  • 1 teaspoon of cumin (jintan/jinten)
  • 1 tablespoon tamarind water (tamarind paste + hot water) (air asana Jawa)
  • salt and pepper (garam dan merica bubuk)
  • 1 tablespoon of sugar (gula pasir)
  • 1 tablespoon of vegetable oil (minyak sayur)
  • 1500 ml of thin coconut milk (santan segar)
  • some fried onions (bawang goreng)
  • some lime (jeruk nipis)

Steps:

  1. Place the beef tendon in a big bowl, pour in lime juice and sprinkle little salt. Mix well and store closed in the fridge for 2 hours. (Letakkan otot sapi dalam mangkuk besar dan lumuri dengan air jeruk nipis dan bubuhi sedikit garam. Aduk rata. Tutup mangkuk dan letakkan dalam lemari es selama 2 jam.)
  2. Blend together the garlic, shallots, red Jalapeno, candle nuts, turmeric, cumin, and coriander seeds. (Haluskan bersama bawang putih, bawang merah, cabe merah besar, kemiri, kunyit segar, jintan, dan ketumbar.)
  3. After 2 hours, heat a pan on MEDIUM. Pour in the vegetable oil and stir fry the smooth spices blend until fragrant. (Setelah 2 jam, panaskan wajan dengan api medium. Tuang minyak sayur dan tumis bumbu halus hingga wangi sekali.)
  4. Put in the beef tendon and mix well. Pour in the coconut milk and season with salt , sugar, and pepper. Put in lime leaves, bay leaves, galangal and lemongrass. (Masukkan otot dan aduk rata. Tuangkan santan dan bumbui dengan gara, gula,  dan merica. Masukkan daun jeruk, daun salam dan serai/sereh.)
  5. Cook the beef tendon on MEDIUM heat with the lid on until they are cooked well and tender. For about 2-3 hours. Feel free to add more time. (Masak otot sapi dengan api Sedang hingga matang betul dan empuk dan dengan panci tertutup. Kurang lebih selama 2-3 jam boleh tam bah lagi waktunya jika kikil belum empuk.)
  6. After cooked serve the soup with rice cake or rice. Sprinkle with some fried onion and lime juice. (Sajikan sop kikil sapi bersama lontong atau nasi. Taburi dengan bawang goreng dan perasan jeruk nipis.)
