Deep Fried Milk Fish “Bandeng Kuning Goreng Tepung” (Bilingual Eng-Indonesia)

There are many styles in cooking milk fish. This fish is so forgiving and honest flavored that you can easily cook it you way. Here is my deep fried Turmeric Spiced Milk Fish.

(Teman-teman penggemar Bandeng, ini aku share resep untuk bikin bandeng goreng sendiri di rumah ya, biasanya bandeng goreng pake telur sebelum digoreng, tapi minyaknya biasanya nempel banyak di lapisan telurnya, jadi aku akali dikit pake tepung supaya minim minyak menempel di permukaan kulit. Ini resep nya ya.)

Ingredients:

  • 1-1,5 kg of milk fish –> gutted and scaled (bandeng –> bersihkan sisik dan bersihkan perutnya)
  • some tamarind water  –> tamarind paste + hot water (air asam Jawa)
  • some water (air)
  • 1/2 bunch of galangal (1/2 bongkahan lengkuas)
  • 3 lemongrass –> bashed (serai –> geprak)
  • 10 bay leaves (daun salam)
  • 10 key lime leaves (daun jeruk)
  • salt and pepper (garam dan merica CUKUP BANYAK)
  • frying oil (minyak goreng)
  • some egg white (putih telur)
  • some rice flour (tepung beras)

Blended Spices (bumbu halus):

  • 5 cloves of garlic (bawang putih)
  • 3 cloves of shallots (6 butir bawang merah)
  • 5 candle nuts (kemiri)
  • 4 cm of ginger root –> (jahe segar)
  • 2 teaspoons of cumin (jintan)
  • 3 cm of fresh turmeric (kunyit segar)
  • 2 teaspoons of coriander seeds (ketumbar)

Steps:

  1. Wash the fish under running water. (Cuci bersih ikan di air mengalir)
  2. Marinade the fish in tamarind water for 1 hour. (Celup ikan dalam air asam Jawa selama 1 jam.)
  3. Heat a pan on MEDIUM. Stir fry the blended spices until fragrant. (Panaskan wajan dengan api MEDIUM. Tumis bumbu halus hingga wangi.)
  4. Put in galangal, lemongrass, bay leaves and key lime leaves. Pour in enough water just to soak the fish (Masukkan lengkuas, serai, daun salam dan daun jeruk. Tuang air secukupnya untuk merendam ikan selama direbus.)
  5. Season with salt and pepper (Bumbui dengan garam dan merica.)
  6. Put in the fish and cook until the water absorbed or until FISH COOKED. (Masukkan ikan dan masak hingga air menyurut atau IKAN MATANG.)
  7. Turn off the heat and cool the fish completely in the pan. Don’t move the hot fish, you’ll end with broken messed shape fish. (Matikan api dan biarkan ikan mendingin sempurna di wajan. Jangan angkat ikan dalam kondisi panas, ikan akan mudah hancur.)

  1. Heat a frying pot on MEDIUM. Pour lot of frying oil. (Panaskan wajan dengan api medium, beri minyak banyak untuk menggoreng ikan.)
  2. Cover the fish with rice flour on both sides. (Lapisi ikan dengan tepung beras di kedua sisinya.)
  3. Beat the egg white and dredge the fish on both sides. Drip the excess egg white and dredge the fish on rice flour. Tap the excess flour. (Kocok putih telur dan balurkan ikan di putih telur. Tiriskan putih telur yang menetes. Baluri ikan dengan tepung beras lagi, tepuk tepuk tepung yang berlebih.)
  4. Deep fry the fish until golden brown. Drain the excess oil and serve the fish. (Goreng ikan hingga keemasan. Tiriskan dan siap disajikan)
