Lontong Cap Gomeh (Bilingual Eng-Indonesia)

This year, I made this special dish celebrating moment 2 weeks after Chinese New Year. I skip some of the condiments but still prepared the main ones. I made Rice Cake, Gravy Chicken, Gravy Vegetables and Tofu, Spicy Potato and Chicken Gizzard, Braised Eggs and Soy Bean Powder. Here is the complete recipe..

(Hidangan satu ini memang istimewa, biasanya disajikan dua minggu setelah Tahun Baru Imlek. Kali ini aku bikin sederhana saja, cuma bikin lontong, opor ayam, pindang telur, lodeh sayuran tahu, sambal goreng kentang ampela, dan bubuk kedelai. Yuk, bikin bareng-bareng!)

“Lontong Cap Gomeh Mama Mason”

Rice Cake (Lontong)

  • 6 heaping tbs of rice –> wash and drain (beras –> cuci dan tiriskan)
  • some banana leaves (daun pisang)
  • 2 pandan leaves (daun pandan)
  • water to boil the rice (air untuk merebus nasi)

“My first ever rice cake” (Pertama kali bikin lontong, senengnya bukan maen)

Steps:

  1. Heat lot of water in a pot for boiling the rice. (Didihkan air dalam jumlah banyak untuk membuat lontong.)
  2.  Wrap 2 tablespoons of rice with banana leaves, make sure to make 1/2 size room inside the wrap since the rice shall absorb the water and cooked doubled in size. Repeat until rice done. (Bungkus 2 sendok makan beras dengan daun pisang, pastikan untuk membungkus longgar, karena beras akan mengembang ketika dimasak. Ulangi hingga beras habis.)
  3. Put in the banana leaves wrap inside the boiling water together with the pandan leaves. Boil the rice for about 3 hours on MEDIUM. The rice cake is cooked well if it feels hard and full when you press the banana leaves. (Masukkan bungkusan daun pisang dalam air mendidih bersama dengan daun pandannya. Rebus kurang lebih selama 3 jam hingga beras hancur dan membentuk lontong.)
  4. Drain the rice cake well and set aside. (Tiriskan lontong dengan sempurna dan sisihkan)

Gravy Chicken (Opor Ayam) 

  • 1 kg of chicken –> cut 8 (daging ayam segar –> potong 8)
  • 1 lime (jeruk nipis)
  • 1,5 liters of fresh coconut milk (santan segar)
  • 3 cm of ginger –> bashed (jahe –> geprak)
  • 2 bay leaves (daun salam)
  • salt and peppper (garam dan merica)
  • some sugar (gula secukupnya)

Blended spices (bumbu halus):

  • 4 garlic (bawang putih)
  • 5 small shallots (bawang merah)
  • 5 candle nuts (kemiri)
  • 1/2 teaspoons of coriander seeds (ketumbar)
  • 3 cm of turmeric (kunyit)

Steps:

  1. Squeeze lime over the chicken and rub well. Set aside for 1 hour in fridge. (Lumuri ayam dengan jeruk nipis dan simpan dalam lemari es selama 1 jam.)
  2. Blend all of the ingredients for blended spices. Set aside. (Haluskan bahan bumbu halus dan sisihkan.)
  3. Stir fry the spices with vegetable oil until fragrant (Tumis bumbu halus dengan minyak sayur hingga harum.)
  4. Put in the chicken and stir well. (Masukkan ayam dan aduk rata.)
  5. Pour in the coconut milk and season with salt, pepper, and  sugar. (Tuang santan dan bumbui dengan garam, merica serta gula.)
  6. Put in the ginger and bay leaves. (Masukkan jahe dan daun salam.)
  7. Cook with the lid covered  on MEDIUM HEAT for 1 hour (Masak dengan panci tertutup selama 1 jam dengan api MEDIUM)

Gravy Vegetables and Tofu (Lodeh Sayuran Tahu)

  • 2 Siamese squash –> cut matches (labu siam/manisah –> potong korek api)
  • 15 strings of long green peas –> cut matches (kacang panjang –> potong korek)
  • 1 egg plant –> diced (terong –> potong dadu)
  • 1 onion –> diced (bawang bombay –> potong dadu)
  • 5 green jalapeño –> seed and cut chunk (lombok hijau besar –> buang bijinya dan potong)
  • some puff tofu (tahu goreng)
  • 2 bay leaves (daun salam)
  • 1,5 liters of fresh coconut milk (santan segar)

Blended spices (bumbu halus):

  • 3 garlic (bawang putih)
  • 4 small shallots (bawang merah)
  • 4 candle nuts (kemiri)
  • 1/2 teaspoons of coriander seeds (ketumbar)
  • 2 seedles red jalapeño –> boiled (lombok merah yang sudah dibuang bijinya –> rebus hingga empuk)

Steps:

  1. Blend all of the ingredients for blended spices. Set aside. (Haluskan bahan bumbu halus dan sisihkan.)
  2. Stir fry the spices with vegetable oil until fragrant (Tumis bumbu halus dengan minyak sayur hingga harum.)
  3. Put in all of the veggies and onion and stir well. (Masukkan semua sayuran serta bawang bombay dan aduk rata.)
  4. Pour in the coconut milk and season with salt, pepper, and  sugar. (Tuang santan dan bumbui dengan garam, merica serta gula.)
  5. Put in the bay leaves, green jalapeño and tofu. (Masukkan daun salam, lombok besar hijau dan tahu goreng.)
  6. Cook with the lid covered  on MEDIUM HEAT for 1 hour (Masak dengan panci tertutup selama 1 jam dengan api MEDIUM)

Spicy Potato and Chicken Gizzards (Sambal Goreng Kentang Ampela)

  • 200 grams of potato –> peel and cut dice (ken tang –> kupas dan potong dadu)
  • 150 grams of chicken gizzard (ampela ayam)
  • 1.2 tablespoons of Thai tamarind (asam Jawa)
  • some hot water (air panas)
  • 1 lemongrass –> bashed (serai –> geprak)
  • salt and pepper (garam dan merica)
  • sugar (gula secukupnya)
  • vegetable oil (minyak sayur)

Blended spices (bumbu halus):

  • 4 garlic (bawang putih)
  • 5 small shallots (bawang merah)
  • 100 grams of seedles red jalapeño (lombok merah besar)

Steps:

  1. Pour some hot water over the tamarind and mix well. (Tuangi asam Jawa dengan air panas dan aduk rata.)
  2. Soak the gizzard in the tamarind water for 30 minutes. (rendam ampela dalam air asam selama 30 menit.)
  3. Deep fry potatoes until soft and drain the excess oil (goreng ken tang hingga empuk dan sisihkan.)
  4. Drain and cut the gizzard onto chunks (Tiriskan dan potong-potong ampela)
  5. Blend spices. (Haluskan bumbu halus.)
  6. Stir fry the spices and lemongrass with some vegetable oil until fragrant. (Tumis bumbu halus dan serai dengan sedikit minyak hingga harum.)
  7. Put in the gizzard and cook well done. (Masukkan ampela dan masak hingga matang betul.)
  8. Put in the potato and season with salt, pepper and sugar. Cook for another 5 minutes. (Masukkan kentang dan bumbui dengan garam, merica dan gula secukupnya. Masak selama 5 menit.)

Braised Eggs (Pindang Telur)

  • 5 eggs –> boiled for 10 minutes (telur ayam –> rebus selama 10 menit)
  • 3 garlic –> bashed (bawang putih –> geprak)
  • 1 tablespoon of soy sauce (kecap asin)
  • 3 tablespoons of sweet soy sauce (kecap manis)
  • 500 ml of chicken stock (kaldu ayam)
  • salt and pepper (garam dan merica)

Steps:

  1. Peel the boiled egg. (Kupas telur rebusnya.)
  2. Stir fry the garlic with vegetable oil until fragrant. (tunis bawang putih hingga harum)
  3. Put in the soy sauce and sweet sauce. (Masukkan kecap asin dan kecap manis.)
  4. Pour in the chicken stock. (Tuang kaldu ayamnya)
  5. Boil it. (Didihkan)
  6. Put in the egg and boil for another 5 minutes. (Masukkan telur rebus dan masak selama 5 menit.)

Soy Bean Powder (Bubuk Kedelai)

  • 100 grams of soy bean powder (bubuk kedelai panggang)
  • some sugar (gula pasir)
  • salt (garam)
  • 5 garlic (bawang putih –> geprak)

Steps:

  1. Stir fry the garlic without oil and set aside. (Sangrai bawang putih dan sisihkan.)
  2. Mix the soy bean powder with some salt and sugar and the garlic. (Campur bubuk kedelai dengan garam, gula dan bawang putih.)
