Indonesian Woku Chicken “Ayam Woku” (Biingual Eng-Indonesia)

Savory and rich, this supreme dish is one of my favorite. Meet Woku Chicken, it’s rich and has lot of spices in. Here is the simple recipe for it.

(Teman-teman, masak Ayam Woku yuk, nggak punya Belanga khas orang Manado, jadi ini Ayam Woku Teflon haha..rasanya mantap, pedas nya bisa di sesuaikan dan bakal boros nasi kalo lauknya ini. Yuk, bikin bareng-bareng.)

Ingredients:

  • 1 kg of chicken –> cut chunks (ayam –> potong-potong)
  • 1 key lime (jeruk nipis)
  • 150 ml of water (air putih)
  • 2 lemongrass –> bashed (serai –> geprak)
  • 2 key lime leaves (daun jeruk nipis)
  • 1 bay leaves (daun salam)
  • 3 green onions –> cut long (bawang prei –> potong panjang)
  • 200 grams of small green jalapeño (lombok hijau besar)
  • 100 grams of Asian Basil Leaves (daun kemangi)

Blended spices (bumbu halus):

  • 100 grams of small red jalapeño (lombok merah besar)
  • 5 small red chili pepper (lombok kecil)
  • 2 tablespoons of oil (minyak sayur)
  • 5 garlic (bawang putih)
  • 8 small shallot (bawang merah)
  • 5 candle nut (kemiri)
  • 3 cm of turmeric –> burn a bit (kunyit –> bakar sebentar)
  • 1 tomato (buah tomat)
  • salt (garam)
  • pepper (merica)
  • sugar (gula pasir)

Steps:

  1. Squeeze lime juice over the chicken and rub well. (Lumuri ayam dengan jeruk nipis.)
  2. Store the chicken in fridge for 1 hour. (Simpan ayam dalam lemari es selama 1 jam.)
  3. Blend all of the ingredients for Blended Spices. (Haluskan bumbu halus.)
  4. Cut the green jalapeño on chunk. (Potong-potong lombok besar hijau.)
  5. Stir fry the blended spices and lemongrass, key lime leaves, and bay leaves, on MEDIUM until fragrant. (Tumis bumbu halus, serai, daun jeruk dan daun salam hingga harum.)
  6. Put in the chicken and mix well. Pour the water and cook the chicken for 40 minutes on MEDIUM with lid closed. (Masukkan ayam dan aduk rata. Tuangi dengan air dan masak ayam hingga matang atau selama 40 menit api MEDIUM dengan panci tertutup.)
  7. Take off the lid of the pan and put in the green jalapeño. Cook for another 10-15 minutes. (Buka tutup panci dan masukkan lombok hijau besar. Masak selama 10-15 menit.)
  8. Put in the green onion and basil leaves until soft. (Masukkan daun prei dan daun kemangi hingga lemas.)
  9. Turn off the heat and serve the chicken immediately. (Matikan api dan sajikan ayam nya segera.)
