Indonesian Yellow Chicken Soup “Soto Ayam” (Bilingual Eng-Indonesia)

When you visit Indonesia, this yummy savory yellow chicken soup is a must to try. It is yellow for the turmeric used in the soup base. Wish special flavor and virgin natural savor from the chicken itself, this soup is absolutely delicious. Here is the simple recipe for it.

(Teman-teman, yang dari Indonesia pasti cinta sama sup yang satu ini. Ada beragam soto di Indonesia, salah satu yang paling terkenal adalah Soto Ayam. Yuk, bikin bareng-bareng tanpa bumbu jadi.)

Ingredients:

  • 5 garlic (bawang putih)
  • 8 small shallots (bawang merah)
  • 5 candle nuts (kemiri)
  • 3 cm of fresh turmeric –> peel slightly burn it on fire a bit (kunyit –> bakar)
  • 1 teaspoon of coriander seed (ketumbar)
  • 1/2 teaspoon of cumin (jintan)

BLEND THE INGREDIENTS ABOVE MAKING SMOOTH PASTA and slightly stir fry until fragrant (Haluskan bahan-bahan diatas untuk membuat bumbu soto dan tumis hingga harum)

  • 1 kg of Chicken (ayam)
  • 2 key lime leaves (daun jeruk)
  • 1 bay leaf (daun salam)
  • 2 lemongrass –> bashed (serai –> geprak)
  • salt and pepper (garam dan merica secukupnya)

Condiments (Pelengkap):

  • soaked Chinese glass noodle (suun)
  • fried onion (bawang goreng)
  • several boiled egg (telur rebus)
  • some chopped green onion (daun bawang)
  • chili blend (sambal)
  • Indonesian sweet soy sauce (kecap manis)

Steps:

  1. Boil 3 liters of water and put in the smooth blended spices and the chicken. Turn the heat to MEDIUM and put in the lime leaves, bay leaf, lemongrass and salt and pepper. Put on the lid and cook until the chicken cooked well for about 45 minutes – 1 hour. (Didihkan 3 liter air dalam panci dan masukkan bumbu halus dan ayam. Masak dengan api MEDIUM dan masukkan daun jeruk, daun salam dan serai. Taburi garam dan merica secukupnya.)
  2. Take out the chicken and cool completely. Shred the chicken and set aside. (Keluarkan ayam dari panci dan biarkan mendingin sempurna. Sobek-sobek ayam dan sisihkan.)
  3. Serving the Soto: Take one bowl, put in glass noodle, shredded chicken, and egg. Pour with the BOILING soup, sprinkle with green onion and fried onion. (Menyajikan soto: ambil sebuah mangkuk, isi dengan suun, ayam suwir, telur rebus dan siram dengan kuah MENDIDIH. Beri potongan daun bawang dan bawang goreng)
  4. You can add sweet soy sauce and chili blend on the top. Enjoy! (Bisa ditambahkan kecap manis dan sambal jika suka. Selamat menikmati.)
