Indonesian “Batagor” (Bilingual Eng-Indonesia)

Yesterday morning, I was sitting in my couch alone after little one went to school. Suddenly my mind struck to one of my fave school snack back in my high school time. This is Batagor. It is basically deep fried tofu with fish cake, topped with special peanut sauce and became sexy together in a plate (no, we used plastic bag before..i know). It is very popular school snack that we had to be in a long queue right after the bell rang for it. Here is my simple recipe for it.

(Teman-teman, bikin Batagor sekolahan sendiri di rumah yuuuk.. memang ada beberapa steps nya, tapi penantian yang sabar berbuah manis. Cobain yuk!)

Ingredients:

  • 3oo grams of white fish (ikan tengiri)
  • 3 tablespoons of tapioca starch (tepung tapioka)
  • 1 egg yolk (kuning telur ayam)
  • salt and pepper (garam dan merica secukupnya)
  • 300 gram of medium firm tofu (tahu)
  • 1/2 cup of flour (tepung terigu)
  • 1/2 cup of rice flour (tepung beras)
  • 1 cup of water (air putih)
  • oil for deep frying

Sauce (Sausnya):

  • 100 grams of raw peanut –> deep fried (kacang tanah mentah –> goreng)
  • 250 ml of coconut milk (santan kental)
  • 1 tablespoon of palm sugar rock (gula Jawa)
  • 1 teaspoon of tamarind water (air asam Jawa)
  • salt and pepper (garam dan merica secukupnya)

Condiment (Pelengkap):

  • Indonesian sweet soy sauce (kecap manis)
  • Fried onions (bawang goreng)

Steps:

  1. Blend all of the ingredients for making the sauce and stir fry in MEDIUM heat until boiling. Turn off the heat and set aside. (Campur rata semia bah an untuk membuat saus dan tunis dengan api MEDIUM. Sisihkan.)
  2. Making the fish cake: Blend together the fish, tapioca, egg, salt and pepper until smooth. (Membuat adonan ikan: Blender bersama ikan tengiri, tapioca, telur, garam dan merica hingga halus. Sisihkan)
  3. Cut the tofu onto small dices, take one tofu and top it with 1 teaspoon of the fish cake. Repeat until all the tofu and fish cake done. (Potong-potong tahu menjadi dadu kecil dan olesi masing-masing permukaan nya dengan  1 sendok teh adonan ikan)
  4. Heat a pan with oil for frying on MEDIUM. (Panaskan minyak dalam wajan dengan api MEDIUM.)
  5. In a bowl, mix together the flour, rice flour, salt and pepper, and the water until smooth. (Campur bersama tepung terigu, tepung beras, garam dan merica serta air putih hingga halus.)
  6. Dip one tofu on the batter and deep fry until golden brown. Repeat to the rest. (Celupkan masing-masing tahu dalam adonan tepung cair dan goreng hingga matang.)
  7. Take some fried tofu fish cake and top with the sauce. (Ambil sejumplah batagor dan sajikan di piring, siram dengan saus kacang.)
  8. Sprinkle some fried onion and pour bit Indonesian sweet soy sauce. Enjoy. (Taburi dengan bawang goreng dan tuangkan sedikit kecap manis. Selamat menikmati)
