Deep Fried Beef Lungs “Paru Goreng” (Bilingual Eng-Indoensia)

One of my fave condiments on economy rice for breakfast, deep fried beef lungs. Marinated with Javanese yellow spices blend, savory and soft. Here is the recipe for it.

Ingredients:

  • 500 grams of beef lung (pari sapi mentah)
  • 3 liters of water (air putih)

Blended spices (Bumbu halus):

    • 5 cloves of garlic (bawang putih)
    • 3 cloves of shallots (6 butir bawang merah)
    • 5 candle nuts (kemiri)
    • 1 lemongrass (serai/sereh)
    • 3 cm of fresh turmeric (kunyit segar)
    • 2 cm of fresh ginger (jahe segar )
    • 2 teaspoons of coriander seeds powder (ketumbar)
    • 1 tablespoon of grated palm sugar rock (gula Jawa)
    • salt and pepper (garam dan merica bubuk)
    • 2 tablespoons of vegetable oil (minyak sayur)

Addition (tambahan):

  • lot of vegetable oil for frying
  • 3 key lime leaves (daun jeruk)

Steps:

  1. Boil the whole huge lung in 3 liters of boiling water until it’s HALF boiled. (Rebus paru utuh dalam 3 liter air mendidih sampai SETENGAH MATANG.)
  2. Take out the lung and begin to slice it 1 cm thick each. Bring back to boiling water and continue boiling until all lung slices cooked well. Then, drain the excess water. (Keluarkan paru utuh dari air dan iris tipis dengan ketebalan 1 cm masing masingnya, rebus kembali sampai matang betul. Tiriskan.)
  3. Stir fry the blended spices + 3 key lime leaves in a sauce pan until fragrant on LOW heat. Then, let cool completely. (Tumis bumbu halus dan daun jeruk dengan api kecil hingga harum. Matikan api dan diamkan hingga bumbu mendingin sempurna.)
  4. In a big bowl, mix together the cooked lungs and the blended spices. Cover the bowl with plastic wrap and store in fridge overnight. (Pada sebuah mangkuk besar, campur rata paru dan bumbu halus yang telah ditumis, tutup rapat mangkuk dan simpan dalam lemari es SEMALAMAN.)
  5. The day after, prepare frying oil in a pan on MEDIUM heat. (Keesokannya, panaskan minyak goreng dengan api Medium.)
  6. Take out the lungs and slightly one by one scrap the extra spices off. You want the lungs to be “clean” from the spices now. (Keluarkan paru dari kulkas dan perlahan satu per satu kerik bumbu yang menempel pada paru, paru harus bersih dari bumbu ketika hendak digoreng.)
  7. Fry the lungs for 7-8 minutes or depends on preferences. Drain the excess oil and serve warm. (Goreng paru selama 7-8 menit atau sesuai selera, tiriskan minyak nya dan sajikan panas.)
