Egg Murtabak “Martabak Telor” (Bilingual Eng-Indonesia)

Used to enjoyed this yummy bites back to my home in Indonesia. Basically it is thin dough wrapper filled with eggs and beef curry, or you can choose chicken or any other meat you like, pan fried until crispy and cooked. Very savory and very addicting. Here is the recipe for it.

(Teman-teman, bikin martabak sendiri di rumah yuk, ini martabak telor seperti yang biasa kita beli di rombong martabak, pake kulit tipis yang diisi langsung sama telor daging. Aku nggak punya wajan pipih lebarnya itu cuman pake telon biasa, agak susah pas melebarkan adonan kulitnya, tapi seneeeng banget bisa bikin ginian di rumah. Yuk, bikin juga!)

Egg Murtabak "Martabak Telur/Telor" (Bilingual Eng-Indonesia)

Ingredients:

Wrapper: (1 murtabak)

  • 100 grams of bread flour (tepung untuk membuat roti)
  • 80 ml water (air putih)
  • 1 tablespoon of vegetable oil (minyak sayur)
  • some salt (garam secukupnya)
  • some vegetable oil for dipping the wrapper dough (minyak sayur untuk merendam adonan)

Filling (Isian):

(Curry Beef (Daging sapi Kari):

  • 150 grams of ground beef (daging sapi giling)
  • 1 tablespoon of vegetable oil (minyak sayur)
  • 2 cloves of garlic –> bashed (bawang putih –> geprak)
  • 4 cloves of small shallots –> sliced thin (bawang merah –> iris tipis)
  • 1 teaspoons of curry powder (bubuk kari)
  • salt and white pepper (garam dan merica putih secukupnya)

(Murtabak filling (Isian Martabak):

  • cooked curry beef (tumisan daging sapi kari)
  • 4 large eggs (telur ayam)
  • 5 green onions –> sliced small (bawang prei –> potong kecil)
  • salt and white pepper (garam dan merica putih)

Steps:

  1. Make the wrapper dough : In a bowl mix together flour, water, salt, 1 tbs of vegetable oil and knead for 10 minutes. Put the dough in a small deep bowl with enough vegetable oil to cover the whole surface of the dough. Set aside for hours. (Membuat adonan kulit: Pada sebuah mangkuk, campurkan tepung, garam, air, dan 1 sdm minyak sayur, camper dan uleni hingga 10 menit. Letakkan adonan dams mangkuk kecil dalam yang berisi cutup minyak sayur untuk merendam seluruh bagian adonan nanti. Diamkan selama beberapa jam.)
  2. Make the Curry Beef: Heat a pot on medium and pour in the oil. Wait until hot and stir fry the garlic and shallots until fragrant. Put in the beef and cooked until well cooked and put in the curry powder, salt and white pepper, stir well for 5 minutes. Turn off the heat and set aside the curry beef. (Membuat Daging sapi kari: Panaskan wajan dengan api medium, tuangi dengan minyak sayur, tunggu sampai panas lalu tumis bawang putih dan bawang merah hingga harum, masukkan daging giling dan tumis hingga matang betul, masukkan bubuk kari dan garam serta merica putih, Aduk rata selama 5 menit, matikan kompor dan sisihkan.)
  3. Just before cooking the Murtabak, mix together all of the ingredients of Murtabak Fillings well. Set aside (Sesaat sebum mulai memasak Martabak, campur semua bahan untuk isian martabak dan sisihkan.)
  4. Make the Murtabak: Place big round shape baking paper on a table. Heat a frying pan on medium with 2 tbs of oil on it, take the wrapper dough out of the bowl and put the dough in the center of the baking paper. Then start to flatten it using rolling pin slowly (since the sheet is easy to tear and it is very unforgiving lol), slightly flatten the dough following the round shape of the baking paper. Slightly place the baking paper with the wrapper on it onto the pan, place the center of the wrapper first and let the edge side aside, quickly peel the baking paper (be careful not to tear the sheet), fill the sheet with all of the Filling and quickly wrap it with the left corner side of the wrapper, making a big envelope. Cook for 3 minutes (always check the base surface to it, when it is getting dark, flip the martabak carefully), add more bit of oil and continue frying the murtabak until cooked and golden crispy. Take it off the pan. (Membuat Martabak: Mula-mula gelar baking paper yang telah dipotong bentuk bundar besar pada sebuah meja. Panaskan wajan dengan api medium dengan 2 sdm minyak sayur di dalamnya, ambil adonan dan letakkan di tengah baking paper, mulai perlahan gilas adonan dengan penggilas hingga pipih, pelan-pelan ikuti bentuk bundar baking paper sambil terus melebarkan adonan, pelan-pelan saja jangan sampai sobek, setelah minyak cukup panas, perlahan letakkan kulit martabak yang masih melekat di baking paper, letakkan bagian tengahnya dulu, biarkan bagian sisi nya menggantung di luar wajan, segera tuang isian martabak dan segera tutup dengan sisi kulit nya, membentuk amplop besar. lulu goreng perlahan (perhatikan jangan sampai gosong, bila sudah kecoklatan boleh dibalik), tambah sedikit minyak lagi kedalam wajan dan goreng semua bagian martabak hingga matang dan renyah.)

5. After cooked, place the murtabak vertically on a sieve. Make small hole on the base of the murtabak to drain the excess oil. Take it after minutes,  and cut following preference. Enjoy! (Setelah martabak matang, letakkan martabak dengan posisi tegak dan lubangi sedikit saja bagian dasar martabak untuk meniriskan minyak berlebih. Potong-potong dan sajikan. )
