Indonesian Beef Tendon and Tofu mix “Tahu Campur” (Bilingual Eng-Indonesia)

It is basically beef tendon in hearty spicy soup, not hot at all. Super good served with deep fried soy bean cake (tofu) and some condiments. Here is the recipe!
(Teman-teman, ini aku share resep untuk buat Tahu Campur sendiri di rumah ya. Biasanya tahu campur terdiri dari sup tetelan dan kikil sapi, disajikan sama perkedel singkong plus selada dan tahu goreng plus petis. Tapi karena kurang suka sama perkedel singkong, maka resep ini minus perkedel singkong yah..Yuk, bikin bareng-bareng!)

Indonesian Beff Tendon and Tofu Mix
Ingredients:

  • 1 kg of beef tendon –> cut chunks (kikil sapi (potong kotak)
  • 300 grams of beef bones (tulang sapi)

Smooth Blended Spices (Bumbu Halus):

  • 6 cloves of garlic (bawang putih)
  • 10 cloves of small shallots (bawang merah)
  • 8 candle nuts (kemiri)
  • 2 teaspoons of cumin (jinten)
  • 2 teaspoons of coriander seeds powder (ketumbar bubuk)
  • 3 cm of turmeric –> burn the turmeric in open fire to reduce the strong smell (kunyit –> bakar sejenak)

Additional Spices (Bumbu Tambahan):

  • 1 tablespoon of vegetable oil (minyak goreng/sayur)
  • salt (garam)
  • 1 teaspoon of sugar (gula pasir)
  • 1/2 teaspoons of white pepper powder (merica bubuk)
  • 3 cm of ginger –> bashed (jahe –> geprak)
  • 2 lemongrass –> bashed (serai/sereh –> geprak)
  • 4 cm of ginger (jahe)
  • 2 liters of water (air putih)

Condiments (Pelengkap):

  • some fried tofu (tabu goreng)
  • fresh green lettuce (selada hijau)
  • some egg noodles (mie)
  • some shrimps chips (kerupuk udang)
  • some fried shallots (bawang merah)
  • some minced chili (sambal)
  • Special “Sambal Petis” made of Shrimp Paste (petis) + some chili pepper (cabe rawit) + some fried garlic (bawang putih goreng) and some hot water (air panas)

Steps:

  1. Boil the water and the bones for 30 minutes until the water remains 1,5 liters only. Set the broth aside. (Rebus tulang sapi dengan air selama 30 menit hingga air tersisa 1,5 liter saja. Sisihkan kaldu sapi.)
  2. Blend together blended spices. Stir fry the smooth spices with vegetable oil until fragrant. (Haluskan bahan bumbu halus. Tumis bumbu halus bersama minyak goreng hingga harum.)
  3. Heat a big pot on medium with the beef broth inside. Put in the smooth blended spices and mix well. Put in the beef tendon and all additional spices, and cook again for 1 hour or until the tendon bit soft. (Panaskan panci besar dengan kaldu sapi di dalamnya dengan api medium. Masukkan semua bumbu halus yang sudah ditumis dan aduk rata. Masukkan Kikil sapi dan bumbu tambahan. Masak selama 1 jam atau lebih hingga kikil sedikit empuk.)
  4. Serve the beef tendon and soup together with some cuts of fried tofu, fresh green lettuce, some noodles, some chips, fried shallots, chili and special “Sambal Petis”. Serve hot. (Sajikan daging kikil dan sup dengan potongan tahu goring, selada segar, mie telur, kerupuk, bawang goreng, sambal petisnya juga. Sajikan segera.)
