Steam Pork Neck Bones “Balungan Babi Kukus” (Bilingual Eng-Indonesia)

First you steam the neck bones with some meat on them, then straightly braise them in a pan. Feel free to use ribs instead. Very yummy dish!

(Teman-teman hari ini aku nyoba mbikin masakan tulang leher babi yang dimasak saus pekat. Semulanya di kukus dulu sampai babinya empuk agak lama dikit sekitar 1,5 jam lalu babi dimasak di pan teflon biasa sambil bumbunya di kentalkan. Bila nggak ada tulang leher boleh gunakan iga babi atau sapi. Asli enak banget. Cobain yuk!)

Braised Pork Neck Bones (Bilingual Eng-Indonesia)

Ingredients:

  • 1 kg of pork neck bones (tulang leher babi potongan)

Marinade sauce (Bumbu Rendaman):

  • 3 cloves of garlic (bawang putih)
  • 1 tsp of coriander seeds powder (ketumbar)
  • 1/4 teaspoon of 5 spice powder (Ngo Hiong bubuk)
  • 1 teaspoon of fish sauce (kecap ikan)
  • 1 tablespoon of oyster sauce (saus tiram)
  • 1 tablespoon of soy sauce (kecap asin)
  • 1 tablespoon of Indonesian sweet soy sauce (kecap manis)
  • 3 tablespoons of Chinese Cooking Wine (angciu)
  • 2 star anise (bunga pekak)
  • 1 tablespoon of sugar (gula pasir)

Additional (Tambahan):

  • 1 big onion –> cut chunks (bawang bombay –> potong kotak)
  • 2 green onions –> cut long (bawang prei –> potong panjang)
  • 1 teaspoon of starch (kanji) + 2 tablespoons of water (air)

Steps:

  • Put the pork in a big bowl, then blend all of the ingredients for marinade sauce. Mix together with the pork well. Cover with the lid and store in the fridge for 1 hour. (Letakkan babi dalam sebuah mangkuk, camper semua bahan reedman, tuang kedalam mangkuk dan lumuri babi dengan bumbu hingga rata. Tutup mangkuk dan simian dalam lemari es selama 1 jam.)
  • Take the pork out of the fridge after 1 hour. (Keluarkan mangkuk dari kulkas setelah 1 jam.)
  • Heat a steamer on MEDIUM HIGH until the water boiled. Place the bowl in the steamer and steam for 1,5 hour or until the meat becomes soft. (Panaskan dandang/ pengukus dengan api MEDIUM BESAR hingga air di dalam nya mendidih. Masukkan mangkuk berisi babi dan bumbu kedalamnya. Kukus selama 1,5 jam hingga babi empuk.)
  • After 1,5 hours, heat a pan on HIGH. Pour in the marinade sauce on the pan and simmer. Put in onion and bring it to boil. Pour in the starch mix little by little until you reach the consistency of thickness you want. Put in the pork and mix well for 1 minute. Sprinkle the green onion and mix well. Done! (Setelah 1,5 jam, panaskan sebuah wajan dengan api BESAR. Tuang kuah bumbu kukusan yang ada di mangkuk babi dan didihkan. Masukkan potongan bawang bombay dan aduk rata hingga sedikit empuk. Tuang air kanji sedikit demi sedikit hingga kuah mengental. Masukkan babi dan aduk rata selama 1 menit. Taburi dengan potongan bawang prei dan aduk lagi. Sajikan segera.)
