Malaysian “Nasi Lemak” (Bilingual Eng-Indonesia)

Simple is just right, meet this iconic Malay fave food : Nasi Lemak, served best for breakfast and lunch, and even dinner! So yummy and easy to make. I employed my rice cooker to make the coconut milk rice and added Javanese Fried Chicken to add more meat lol. Here we go!

(Teman-teman ini auk share resep Nasi Lemak sederhana ya. Nikmat banget dimakan lengkap sama ikan teri dan kacang goreng, tapi yang menurutku paling penting dalam nasi lemak ini adalah nasi dan sambal nya. Aku pake rice cooker untuk bikin nasi uduknya. Yuk bikin rame rame..)

Ingredients:

Coconut Rice (Nasi-nya):

  • 1 cup rice (beras)
  • 1,5 cups of coconut milk + 1/2 cups of water (2 cup santan)
  • salt (garam secukupnya)
  • 2 cm of ginger –> peel and washed (jahe –> kupas dan cuci bersih)
  • 2 pandan leaves –> tie knot (daun pandan –> ikat simpul)
  • 2 cloves of garlic –> minced (bawang putih –> haluskan)

Chili blend “Sambal “

  • 6 big red Jalapeño –> get rid off the seed (lombok besar merah –> buang bijinya)
  • 4 cloves of garlic (bawang putih)
  • 8 cloves of small shallots (bawang merah)
  • 1 small Thai chili (cabe rawit)
  • 1 tablespoons of sugar (gula pasir)
  • 1/2 tablespoons of Palm rock sugar (gula Jawa)
  • salt (garam sesuai selera)
  • 1 teaspoon of Belacan (terasi udang)
  •  80 ml of vegetable oil (minyak sayur)

Condiments (Pelengkap):

  • Anchovies –> deep fried (ikan teri –> goreng)
  • Boiled eggs (telur rebus)
  • Earth peanuts –> deep fried (kacang tanah –> goreng)
  • Slices of tomato (irisan tomat segar)
  • Slices of cucumber (irisan mentimun)

Steps:

  1. Cook all the ingredients for the Coconut rice in the rice cooker following the instruction on the rice cooker. (Masak semua bah an untuk nasi uduknya dalam rice cooker mengikuti petunjuk penggunaan rice cooker.)
  2. Blend all of the ingredients for the sambal using blender/ mortar pestle. (Haluskan bahan- bahan sambal)
  3. Make the Sambal: Heat a pan on MEDIUM. Pour in the vegetable oil and start to stir fry the blended spices until fragrant for about 5 – 8 minutes while keep in stirring. Set aside the sambal. (Membuat sambal: Panaskan wajan dengan api medium, tuang minyak sayur dan tunis bumbu sambal halls hingga wangi betul kurang lebih 5-8 menit sambil terus diaduk. Sisihkan sambal.)
  4. Serve the coconut rice with boiled egg, anchovies, peanuts, veggies and the Sambal. Enjoy! (Sajikan nasi dengan telur rebus, ikan teri, kacang goreng, sayur iris dan sambal nya.)
