Kalasan Chicken “Ayam Kalasan” (Bilingual Eng-Indonesia)

This dish is typical Indonesian dishes, spicy (but not hot) and rich. Special flavor comes out from the usage of coconut water and coconut milk at the same time, remains the dish very rich and yummy. Here is the recipe.

(Teman-teman, ini aku share resep Ayam Kalasan yang enak dimasak dirumah ya. Bahan-bahan yang digunakan adalah bahan sederhana dan bumbu yang dasar saja. Rasanya manis, gurih, khas masakan dengan air kelapa dan santan. Yuk, bikin baren-bareng.)

Kalasan Chicken "Ayam Kalasan" (Bilingual Eng-Indonesia)

Ingredients:

  • 1 kg of chicken (whole or cut) (1 ekor ayam –> boleh utuh boleh dipotong-potong)
  • 1 lemon (lemon/ jeruk nipis)
  • 4 cloves of garlic (bawang putih)
  • 8 cloves of small shallots (bawang merah)
  • 1 teaspoon of Corriander seeds powder (ketumbar)
  • 1/2 teaspoons of Cumin (jintan)
  • a thumb of Galanga –> peel and bashed (lengkuas –> kupas dan geprak)
  • 1 lemongrass –> bashed (serai –> geprak)
  • 2 bay leaves (daun salam)
  • 2 lime leaves (daun jeruk)
  • 500 ml of coconut milk (santan kelapa)
  • 130 ml of coconut water (air kelapa)
  • 1 tbs of tamarind water –> by mixing tamarind and 4 tbs of hot water (air Asam)
  • 4 tablespoons of palm sugar rock –> grate it before measuring (gula merah/Jawa)
  • 2 tablespoons of vegetable oil (minyak sayur)
  • salt and pepper (garam dan merica secukupnya)
  • some Indonesian sweet soy sauce (kecap manis)

Steps:

  1. Put the chicken in a bowl. Squeeze the lemon on the chicken and rub generously. Close the bowl with plastic wrap and store it in the fridge for 1 hour. (Letakkan ayam pada sebuah wadah. Peras jeruk nipis dan lumurkan pada ayam, tutup wadah dan simpan dalam lemari es selama 1 jam.)
  2. Blender together garlic, shallots, coriander seed powder, and cumin until smooth. (Haluskan bersama bawang putih, bawang merah, ketumbar dan jintan.)
  3. Heat a big pan on MEDIUM. Pour in the vegetable oil and wait until it is hot enough. Put in the blended spices and stir fry until fragrant. Put in the coconut water and coconut milk. Followed with tamarind water and palm sugar rock. Put in bay leaves, lemongrass, lime leaves, salt and pepper and stir the sauce until it starts to boil. (Panaskan wajan dengan api MEDIUM. Tuang minyak sayur dan tunggu hingga panas. Tumis bumbu halus hingga harum. Masukkan air kelapa dan santan. Masukkan air asam dan gula Jawa. Tambahkan daun salam, serai, daun jeruk, garam dan merica sesuai selera. Aduk rata hingga mendidih.)
  4. Put in the chicken and cook until all of the sauce absorbed for about 40-50 minutes. (Masukkan ayam dan masak hingga saus terserap sempurna oleh ayam, kurang lebih selama 40-50 menit.)
  5. Turn off the stove and set the chicken aside for 1 hour. (Matikan api dan sisihkan ayam selama 1 jam.)
  6. Heat the oven (you can use your BBQ grill too) on GRILL 200 C. Brush the chicken with sweet soy sauce and grill it for 5 minutes. Brush with sweet soy sauce and grill again for 5 minutes. Done! (Panaskan oven (boleh juga panggangan sate) API ATAS suhu 200 C. Olesi ayam dengan kecap manis dan panggang selama 5 menit, olesi lagi dengan kecap manis dan panggang lagi selama 5 menit atau hingga kecoklatan. Selesai!)
