Indonesian Spicy Ribs “Iga Bakar Rempah Kecap” (Bilingual Eng-Indonesia)

Indonesian culinary = spices (not always hot), Indonesian spices meets ribs = heaven on your tongue!!

Try this Indonesian style side pork ribs I made at home yesterday. So simple so delicious and lip smacking. It need some ingredients you can always find on Asian store. This thing is way much more delicious than your common BBQ ribs. Here we go!

(Teman-teman bikin Iga Bakar Rempah Kecap yuk….butuh bahan bahan dapur seperti biasa kayak bawang, jahe dan kawan kawan, rasanya pun mantaaapp abis, ngalahin BBQ pork ribs. Perpaduan antara kuliner Indonesia dan Thailand dikit. Yuk, bikin bareng-bareng!)

Ingredients:

  • 1,5 kg of side pork ribs (iga babi/sapi)
  • 1 lemon –> squeeze (jeruk lemon –> peras)
  • some Indonesian sweet soy sauce (kecap manis)

Blend together : (haluskan)

  • 4 cloves of garlic (bawang putih)
  • 6 cloves of shallots (bawang merah)
  • 2 teaspoons of coriander seeds powder (ketumbar)
  • 1 teaspoon of cumin (jinten)
  • 3 cm of ginger (jahe)
  • 1 teaspoon of paprika powder (bubuk paprika)
  • 1 lemongrass (sereh 2 batang)
  • salt and pepper (garam dan merica bubuk secukupnya)
  • 50 ml vegetable oil (minyak sayur)
  • 1 tablespoon of sugar (gula pasir)

Steps:

  1. Put the ribs on chopping board and poke the meat surface with your knife tip slightly both sides. Rub both sides with lemon juice and store them in a bowl covered in the fridge for 1 hour.(Letakkan iga pada sebuah telenan dan perlahan tusuk tusuk bagian dagingnya dengan ujung pisau. Olesi seluruh permukaan iga dengan perasan jeruk lemon dan simpan tertutup dalam lemari es selama 1 jam.)
  2. After 1 hour, take out the ribs and rub gently both sides with the blended spices. Store well in a bowl and cover with its lid, put in the fridge for overnight. (Setelah 1 jam, keluarkan iga dari kulkas dan perlahan baluri kedua permukaannya dengan bumbu yang telah dihaluskan. Simpan tertutup kembali dalam lemari es semalaman.)
  3. The day after, preheat your oven to 120 C. (Besoknya, panaskan oven hingga 120 C.)
  4. Wrap the ribs with aluminum foil and bake them for 2 hours. (Bungkus iga dengan aluminum foil dan panggang di oven selama 2 jam.)
  5. After 2 hours, unwrap the ribs, brush them with some Indonesian sweet soy sauce and place them on wire rack. Turn the oven to GRILL. (Setelah 2 jam, buka aluminum foil dan keluarkan iga, Olesi permukaannya dengan kecap manis dan letakkan di rak pemanggang. Nyalakan api atlas oven saja.)
  6. Grill for 5 minutes, take out and repeat brushing the ribs with sweet soy sauce and grill again for 5 minutes. (Panggang selama 5 menit, keluarkan dan olesi dengan kecap manis lagi lulu panggang lagi selama 5 menit.)
  7. Take the ribs out the oven and serve immediately. (Keluarkan iga dari panggangan dan sajikan segera.)
