Javanese Fried Duck “Bebek Goreng” (Bilingual Eng-Indonesia)

Another sexy way to cook duck, the Javanese deep fried duck. Simply cook the duck in its marinade and spices and deep fried it. The meat of the duck is soft and tender, juicy and crispy outside. Here is the recipe.

(“Bebek oyeng…bebek oyeng (goreng)”…..salah satu menu favorit di Surabaya. Nggak peduli pagi, siang, malem selalu cocok kalo menunya yang satu ini. Kemarin nyoba bikin sendiri tanpa MSG di rumah. Aku pakai bagian SAYAP nya karena malas bersihkan bagian pantat bebek yang katanya punya kelenjar bau. Pastikan potong atau buang bagian pantat bebek ya untuk menghindari baunya. Kemarin puas makan bebek goreng, dagingnya empuk didalam, juicy tapi crispy di luar. Maknyuuuss banget. Yuk, cobain!)

Ingredients:

  • 1 kg of duck wings/ thighs (sayap/ paha bebek)
  • 2 tablespoons of lime juice (perasan jeruk nipis)
  • 5 cloves of garlic (bawang putih)
  • 3 cloves of shallots (6 butir bawang merah)
  • 5 candle nuts (kemiri)
  • 3 lime leaves (daun jeruk)
  • 1 lemongrass (serai/sereh)
  • 3 cm of fresh turmeric –> peel and burn it a bit in open stove (kunyit segar –> bakar sejenak)
  • 3 cm of fresh galangal –> peeled and bashed (lengkuas –> pupas dan geprak)
  • 2 teaspoons of coriander seeds powder (ketumbar)
  • 1 tablespoon of cumin (jintan)
  • salt and pepper (garam dan merica bubuk)
  • 2 tablespoons of tamarind water –> mix together peeled tamarind and 100 ml of boiling water (air asam)
  • 1000 ml of water (air putih)
  • lot of frying oil (minyak goreng)

    Steps:

    1. Place the duck in a big bowl, pour in lime juice and sprinkle little salt. Mix well and store closed in the fridge for 2 hours.

    (Letakkan bebek dalam mangkuk besar dan lumuri dengan air jeruk nipis dan bubuhi sedikit garam. Aduk rata. Tutup mangkuk dan letakkan dalam lemari es selama 2 jam.)

    2.Blend together the garlic, shallots, candle nuts, cumin, turmeric, and coriander seeds powder.

    (Haluskan bersama bawang putih, bawang merah, kemiri, jintan, kunyit segar, dan ketumbar.)

    3. After 2 hours, heat a pan on MEDIUM. Pour in 1 tablespoon of vegetable oil and stir fry the smooth spices blend until fragrant.

    (Setelah 2 jam, panaskan wajan dengan api medium. Tuang 1 sdm minyak sayur dan tumis bumbu halus hingga wangi sekali.)

    4. Put in the duck and mix well. Pour in the water and season with salt and pepper. Put in tamarind water, galangal, lime leaves and lemongrass.

    (Masukkan bebek dan aduk rata. Tuangkan air dan bumbui dengan garam dan merica. Masukkan air asam, lengkuas, daun jeruk dan serai/sereh.)

    5. Cook the bebek on LOW-MED heat until they are cooked well and the water reduced and get thicker. For about 1 hour-more.

    (Masak bebek dengan api Kecil-Sedang hingga matang betul dan air menyurut kental. Kurang lebih selama 1 jam atau lebih.)

    6. After cooked. Turn off the stove and set aside for 1 hour.

    (Setelah matang, matikan api dan biarkan bebek selama 1 jam.)

    7. Heat a pot/ frying pan on HIGH with lot of frying oil. When the oil is hot enough, fry the duck less than 2 minutes. Drain excess oil on paper towel and serve the duck immediately.

    (Panaskan wajan dengan banyak minyak didalamnya, panaskan dengan api BESAR. Ketika minyak sudah panas, goreng bebek kurang dari 2 menit saja atau hingga bebek kecoklatan. Angkat dan tiriskan. Sajikan bebek goreng segera.)
