Beef Poured Rice Noodle “Kwetiau Siram Sapi” (Bilingual Eng-Indonesia)

I just adjust my new recipe for making fresh thin rice noodle at home. Check this out and give it a try.

(Teman-teman, bikin Kwetiau sendiri di rumah yuk, hari ini aku olah kwetiau nya menjadi kwetiau siram sapi. Karena masak di rumah, jadi bisa bebas MSG dan bisa dipuasin jumlah daging dan sayurnya sesuka hati. Here we go!)

Ingredients:

Beef Poured Rice Noodle "Kwetiaw Siram Sapi" (Bilingual Eng-Indonesia)

Kwetiaw Recipe: (2 portions)

  • 2 cups of rice flour (tepung beras)
  • 1/2 cup of tapioca flour (tapioka)
  • 1/2 cup of corn starch / maizena
  • salt (garam)
  • 3 cups of room temperature water (air suhu sedang)
  • some oil for greasing

Steps:

1. Preheat a steamer with enough water in it on MEDIUM-HIGH.

(Panaskan pengukus/dandang berisi banyak air didalamnya, tutup dan didihkan.)a

2. Mix together all the rice flour, the tapioca flour, maizena, and salt in a big bowl and slightly pour the water gradually while keep on mixing the batter. Mix well and set aside.

(Campur bersama tepung beras, tepung tapioka, maizena dan garam dalam sebuah mangkuk besar dan perlahan tuang air ke dalamnya sambil terus di aduk rata. Aduk rata dan sisihkan.)

3. Take one round cake pan and grease it thin with vegetable oil using fine brush. Stir the batter again and take 1 ladle of it and pour it into the pan to make round sheet shape with thickness around 1-1,5 mm (not more than that). Put the pan in the steamer and cover with the lid. Steam for 4 minutes.

(Siapkan sebuah loyang kue bulat dan olesi permukaan dalamnya dengan minyak sayur dengan menggunakan kuas bersih. Aduk adonan dan ambil 1 sendok sup adonan dan tuangkan ke dalam loyang dengan ketinggian adonan kurang lebih 1-1,5 mm saja (jangan terlalu tebal), ratakan dan letakkan loyang dalam tutup panci. Kukus selama 4 menit.)

4. Take the pan out and brush the surface of the noodle with vegetable oil again, scrape it off using rubber spatula and set it aside. Repeat making the noodle until all the batter done.

(Keluarkan loyang dan olesi permukaan kweetiaw dengan minyak sayur lagi, perlahan lepas/kupas lembaran kweetiaw dari loyang dan sisihkan. Ulangi hingga adonan habis.)

5. Cut the noodle sheet onto 1/2 inch width, set aside. (Potong lembaran kweetiaw dengan pisau menjadi ukuran 1-1,2 cm. Kwetiaw soap digunakan.)

Beef Poured Kwetiaw (Kwetiaw Siram Sapi): (1 portion)

  • 150 grams of Fresh Kwetiaw (kwetiaw segar)
  • 60 grams of beef tenderloin –> sliced thin (daging sapi –> iris tipis)
  • some sausage (optional) –> sliced (sosis (optional)–> potong potong)
  • some fish cake (optional) –> sliced thin (bakso ikan (optional) –> iris)
  • 1 tablespoon of soy sauce (kecap asin)
  • 1 tablespoon of vegetable oil (minyak sayur)
  • 2 cloves of garlic –> bashed (bawang putih –> geprak)
  • 1 small onion –> sliced thin (bawang bombay –> iris tipis)
  • some carrot –> cut matches (wortel –> potong korek api)
  • 1 bunch of Gai Lan –> cut 5 cm length (sawi hijau –> potong 5 cm)
  • 1 tomato –> cut onto 4 (tomat–> potong 4 bagian)
  • 1 green onion (bawang prei)
  • salt and pepper (garam dan merica bubuk)
  • 1 tablespoon of soy sauce (kecap asin)
  • 1 teaspoon of fish sauce (kecap ikan)
  • 1 teaspoon of sesame seed oil (minyak wijen)
  • 500 ml of boiling water (air mendidih)
  • 1 tablespoons of tapioca + 2 tablespoons of warm water (tapioca + 2 sendok makan air hangat)

Steps:

  1. Heat your wok/ pan on HIGH. Pour in vegetable oil and stir fry the garlic until fragrant. Put in beef and stir fry until cooked well. Put in sausages and fish cakes and cook for 1 minute. Put in the Gai Lan, tomato, and carrot and cook for seconds ((Panaskan wajan/ wok dengan api BESAR. Tuang minyak sayur dan tumis bawang putih hingga harum. Masukkan potongan daging sapi dan masak hingga matang. Masukkan sosis dan bakso ikan dan tumis selama 1 menit. Masukkan irisan sawi hijau, tomat, dan wortel, tumis beberapa detik.)
  2. Season with soy sauce, fish sauce, salt and pepper. Keep on stirring and pour in the water. Boil it and pour in mixture of tapioca starch and warm water. Mix well until the soup becomes thicker. Turn off the heat. (Bumbui dengan kecap asin, kecap ikan, garam dan merica sesuai selera. Aduk aduk rata selama memasak dan tuang air mendidih kedalamnya. Didihkan dan segera tuang campuran air hangar dan tapioca untuk mengentalkan kuah. Segera matikan api jika masakan telah matang dan tercampur rata.)
  3. Put the noodle on a plate, pour it with the thick soup and sprinkle with green onion. Serve warm. (Pindahkan kweetiaw pada sebuah piring, siram dengan kuah kental nya dan taburi dengan bawang prei iris. Sajikan panas.)
