Indonesian Gold Mount Yellow Rice Set “Set NASI KUNING” (Bilingual Eng-Indonesia)

Meet Indonesian “Gold Mount” from yellow rice (turmeric rice). Beautiful philosophy brings thing dish set famous in Indonesia for special occasion like birthday, praying activities and celebration. Today I share you my simple style of Nasi Kuning. I serve the yellow rice with some toppings: “Rendang Sapi (Beef Gravy)”, “Sambal Goreng Kentang (Spicy Potatoes)”, Rojak style chicken, Sauted veggies, Javanese style fried chicken, Spicy blended peanuts and anchovy, Sweet soy sauced egg, fried glass noodles, and beef floss (I bought this on store). Let’s get busy then..

(Teman-teman, ini aku share resep membuat Nasi Kuning rumahan. Cocok untuk berbagai acara spesial. Ini kali pertmaa buat nasi kuning, jadi berkesan banget. Rupanya membuat nasi kuning komplit tidaklah susah, tapi memang butuh kesabaran. Ini aku sajikan sama Ayam Goreng Jawa, Ayam Bumbu Rujak, Sambal Teri Kacang, Tumis Jagung Buncis Wortel, Sambal Goreng Kentang, Rendang Sapi, Telur Kecap, sama Suun Goreng, plus Abon Sapi (yang ini beli di market). Jangan lupa sajikan juga sambal kesayangan ya. Sayurnya boleh diganti Urap-urap, begitu dengan varian lainnya. Yuk, bikin bareng-bareng..)

NASI KUNING LENGKAP

Turmeric Rice “Nasi Kuning”

NASI KUNING KOMPLIT

I cook this Yellow Rice in rice cooker. And I didn’t have the rice mount mould so I used Frosting Piping Bag for it. (Membuat Nasi Kuning dengan Rice Cooker)

Ingredients:

  • 1 litre of white rice (beras putih)
  • 200 ml of glutinous rice (beras ketan)
  • 400 ml water (air putih)
  • 2 medium lemongrass (serai/sereh)
  • 2 bay leaves (daun salam)
  • 3 cm of fresh turmeric –> peel and slightly burn this lightly on open fire to reduce the strong smell (kunyit segar, kupas dan bakar sebentar di api untuk mengurangi bau tajamnya)
  • 3 cloves of garlic (bawang putih)
  • 3 cloves of shallots (bawang merah)
  • salt (garam)
  • Large Frosting/ Cream Piping Bag (kantong penyemprot butter cream/ boleh juga gunakan cetakan kerucut untuk tumpeng)

Steps:

  1. Blend and mince together turmeric, garlic and shallots. Bash the lemon grass and cut onto halves. (Haluskan bersama bawang putih, bawang merah, dan kunyit. Geprak serai/sereh dan potong menjadi dua bagian.)
  2. Wash together white rice and glutinous rice. Drain well. (Cuci bersih beras dan beras ketan. Buang airnya.)
  3. Put the blended garlic, shallot, and turmeric on the base of the rice cooker pot. Place in the rice and glutinous rice on top of it. pour in the water. (Masukkan bumbu halls kedalam rice cooker dan masukkan beras dan ketan. Tuang dengan air.)
  4. Put in the salt, bay leaves and lemongrass. Mix everything well. Cook the rice following rice cooker instruction. (Masukkan daun salam dan serai/ sereh serta garam secukupnya. Aduk rata dan masak dengan rice cooker sesuai petunjuk penggunaan.)
  5. After it is cooked. Leave it for 30 minutes on warm mode. (Setelah matang, biarkan nasi kuning dalam rice cooker dalam keadaan WARM/HANGAT selama 30 menit.)
  6. Prepare the piping bag, Fill 1/3 part of it with yellow rice, then press the rice tight to form the shape. Fill with the following rice and press again. Put the last 1/3 part of the rice and press again. (Siapkan cetakan tumpeng/ kerucut dan masukkan 1/3 nasi kuning dalam cetakan, tekan tekan rata dan masukkan lagi 1/3 bagian nasi kuning kedalam lagi, tekan tekan lagi, terakhir masukkan sisa nasi kuning dan tekan tekan rapat lagi.)
  7. Place upside down the piping bag on the center of the giant platter to be served with the toppings. (Balik cetacean ditengah-tengah nampan dan perlahan angkat cetakan. Jadilah gunung nasi tuning kita.)

Beef Gravy (Rendang Sapi):

NASI KUNING KOMPLIT

Ingredients:

  • 1 kilo of beef (daging sapi –> potong kotak kotak agar besar)
  • 2500 ml of fresh coconut milk from fresh coconut (santan segar)
  • 1 tablespoon of tamarind water (mix together felled tamarind and hot water) (air asam/ asem)
  • 2 tablespoons of grated palm sugar rock (gula Jawa/nira)
  • 1 lemongrass –> bash (serai/sereh –> geprek)
  • 3 key lime leaves (daun jeruk nipis)
  • 100 grams of red jalapeño pepper –> get rid off the seeds (lombok merah besar –> buang bijinya)
  • 5 large shallots (bawang merah 10 biji)
  • 5 cloves of garlic (bawang putih)
  • 5 candle nuts (kemiri)
  • 4 cm of fresh galangal –> peeled dan bashed (lengkuas –> pupas dan geprek)
  • salt and pepper (garam dan merica secukupnya)
  • 2 tablespoons of vegetable oil (minyak sayur)

Steps:

  1. Blend smooth garlic, shallots, red pepper, dan candle nuts. Set aside (Haluskan bawang putih, bawang merah, lombok merah dan kemiri. Sisihkan.)
  2. In a big pot, pour in the oil and stir fry the smooth blend of spices above until fragrant. Put in the key lime leaves, lemongrass and galangal. ( Panaskan wajan dan tuang minyak sayur. Tumis bersama bumbu halls diatas hingga harum. Masukkan daun jeruk nipis, serai/ sereh dan lengkuas.)
  3. Put in the beef chunk and stir fry well for 3 minutes. Pour in the coconut milk, put in the palm sugar and season with salt and pepper. (Masukkan potongan daging sapi dan aduk rata selama 3 menit. Tuang santan dan masukkan gula Jawa, garam dan merica secukupnya.)
  4. Turn the heat to LOW. Cook the beef for 2-3 hours until the color become darker and the coconut milk absorbed/ reduced. Don’t forget to keep on stirring it or it will be burnt. (Kecilkan api dan masak daging selama 2-3 jam atau hingga santan kelapa menyusut dan warna saus berubah menjadi gelap. Aduk terus menerus daging ketika memasak supaya tidak gosong.)
  5. After cooked well, set aside the beef gravy and serve together in big platter with the yellow rice. (Setelah matang, sisihkan rendang dan sajikan bersama dalam nampan nasi kuning.)

Javanese Fried Chicken (Ayam Goreng Jawa):

NASI KUNING KOMPLIT

Ingredients:

  • 1 kilo of chicken –> cut into 8 pieces (daging ayam –> potong menjadi 8 bagian)
  • 2 tablespoons of lime juice (perasan jeruk nipis)
  • 5 cloves of garlic (bawang putih)
  • 3 cloves of shallots (6 butir bawang merah)
  • 5 candle nuts (kemiri)
  • 3 lime leaves (daun jeruk)
  • 1 lemongrass (serai/sereh)
  • 3 cm of fresh turmeric (kunyit segar)
  • 2 teaspoons of coriander seeds powder (ketumbar)
  • 1 tablespoon of grated palm sugar rock (gula Jawa)
  • salt and pepper (garam dan merica bubuk)
  • 2 tablespoons of vegetable oil (minyak sayur)
  • 400 ml of water (air putih)
  • lot of frying oil (minyak goreng)

Steps:

  1. Place the chicken in a big bowl, pour in lime juice and sprinkle little salt. Mix well and store closed in the fridge for 2 hours. (Letakkan ayam dalam mangkuk besar dan lumuri dengan air jeruk nipis dan bubuhi sedikit garam. Aduk rata. Tutup mangkuk dan letakkan dalam lemari es selama 2 jam.)
  2. Blend together the garlic, shallots, candle nuts, turmeric, and coriander seeds powder. (Haluskan bersama bawang putih, bawang merah, kemiri, kunyit segar, dan ketumbar.)
  3. After 2 hours, heat a pan on MEDIUM. Pour in the vegetable oil and stir fry the smooth spices blend until fragrant. (Setelah 2 jam, panaskan wajan dengan api medium. Tuang minyak sayur dan tumis bumbu halus hingga wangi sekali.)
  4. Put in the chicken and mix well. Pour in the water and season with salt and pepper. Put in sugar rock, lime leaves and lemongrass. (Masukkan ayam dan aduk rata. Tuangkan air dan bumbui dengan garam dan merica. Masukkan gula jaws parut, daun jeruk dan serai/sereh.)
  5. Cook the chicken on LOW-MED heat until they are cooked well and the water reduced. For about 40 minutes. (Masak ayam dengan api Kecil-Sedang hingga matang betul dan air menyurut. Kurang lebih selama 40 menit.)
  6. After cooked. Set aside closed for 1 hour. (Setelah matang, matikan api dan biarkan ayam selama 1 jam.)
  7. Heat a pot/ frying pan on HIGH with lot of frying oil. When the oil is hot enough, fry the chicken less than 2 minutes. Drain excess oil on paper towel and serve the chicken immediately. (Panaskan wajan dengan banyak minyak didalamnya, panaskan dengan api BESAR. Ketika minyak sudah panas, goreng ayam kurang dari 2 menit saja atau hingga ayam kecoklatan. Angkat dan tiriskan. Sajikan ayam goreng segera.)

Spicy Potatoes (Sambal Goreng Kentang):

NASI KUNING KOMPLIT

Ingredients:

  • 1/2 kg of potatoes –> peel and cut chunk (kentang –> kupas dan potong kotak)
  • 1/2 cup of coconut milk (santan segar setengah cangkir)
  • 2 key lime leaves (daun jeruk)
  • 3 cm of galangal –> peel (lengkuas –> kupas)
  • 4 candle nuts (kemiri)
  • 2 tablespoons of tamarind water (from peeled tamarind + hot water) (air asam/asem)
  • 1 tablespoon of palm sugar rock (gula Jawa/ nira)
  • 1 lemongrass (serai/sereh)
  • 100 grams of red jalapeño pepper –> get rid of the seed (lombok merah bear –> buang bijinya)
  • 4 cloves of garlic (bawang putih)
  • 3 cloves of shallots (bawang merah)
  • salt and pepper (garam dan merica bubuk)
  • oil for deep frying (minyak untuk menggoreng)
  • 1 tablespoon of vegetable oil (minyak sayur)

Steps:

  1. Deep fry the potato chunks until little bit soft and golden brown. Drain the excess oil with paper towel. (Goreng kentang hingga sedikit empuk dan keemasan. Tiriskan)
  2. Blend together the garlic, shallots, candle nuts, red pepper. (Haluskan bawang putih, bawang merah, kemiri, lombok merah.)
  3. Heat a pan on medium. Pour in vegetable oil and stir fry the smooth blended spices until fragrant. Put in the palm rock sugar, lemongrass, lime leaves, tamarind water, galangal, salt and pepper. Mic well. (Panaskan wajan dengan api medium. Tuang minyak sayur dan tumis rata bumbu halus hingga wangi. Masukkan parutan gula jawa, serai/ sereh, daun jeruk, air asam, lengkuas, garam dan merica. Aduk rata.)
  4. Put in the coconut milk. Bring it to boil while keep on STIRRING the milk. Put in the potatoes and cook until the coconut milk absorbed dry. Set aside and serve immediately. (Masukkan santan segar. Masak hingga mendidih sambil terus diaduk rata. Masukkan kentang dan masak hingga santan meresap kering. Angkat dan sajikan segera.)

Spicy Coconut Milk Chicken (Ayam Bumbu Rujak):

NASI KUNING KOMPLIT

Ingredients:

– 1 whole chicken –> cut onto 6 or 8 (ayam satu ekor –> potong menjadi 6 atau 8)

– 1 lemon –> juiced (jeruk nipis/lemon –> peras)

– 200 grams of red jalapeño –> sliced and get rid of the seeds (lombok merah besar –> belah dan buang bijinya)

– some parsley (peterseli –> jangan dipotong potong, biarkan panjang)

– 750 ml of coconut milk (santan kental)

– 5 cloves of garlic (bawang putih)

– 1/2 cups of shallot (bawang merah 6 biji)

– 1 medium tomato (tomat ukuran sedang)

– salt and pepper (garam dan merica secukupnya)

– 1 tablespoon of brown sugar or you can use white sugar instead (gula Jawa secukupnya)

– 2 tablespoons of vegetable oil (minyak sayur)

Steps:

1. Preheat your oven to 180 C. You can grill or deep fried the chicken on SMALL heat instead if you want.

(Panaskan oven hingga 180 C. Bisa juga bakar atau goreng ayam hingga matang dengan api kecil ika diinginkan.)

2. In a casserole, put in the chicken and rub gently with lemon juice. Set aside.

(Pada sebuah pinggan, letakkan ayam dan lumuri rata dengan perasan jeruk nipis/ lemon.)

3. Bake the chicken for 30 minutes on wire rack to separate the chicken from the juice. You can also deep fried/ grill the chicken on low heat until it’s cooked. Set aside.

(Panggang ayam selama 30 menit pada rak pemanggang untuk memisahkan ayam dari cairannya jika dipanggang. Juga bisa digoreng atau dibakar dengan api kecil hingga matang. Sisihkan ayam.)

4. Heat the large frying pan on low heat, and pour in vegetable oil.

(Panaskan penggorengan besar dengan api kecil dan tuang minyak sayur.)

5. Blend smooth the red jalapeños, tomato, garlic and shallots. Pour it on the frying pan. Cook until the natural juice of the spices gone, and it fragrant.

(Haluskan lombok merah besar, tomat, bawang putih dan bawang merah hingga halus. Tuang kedalam penggorengan dengan minyak panas, tumis hingga cairan nya menghilang dan bau nya harum sekali.)

6. Pour in the coconut milk to the spices, and mix well, cook on small heat while keep on stirring the coconut milk until it starts to boil. Put in the chicken and parsley and mix well again, cook for another 30 minutes or until the spices bit drained and absorbed by the chicken. Turn off the heat and serve the chicken (serving the chicken on the day after is better, since the spices blend and absorbed well onto the chicken giving it richer taste).

(Tuang santan kedalam tumisan bumbu, aduk rata lagi, masak dengan api kecil sambil terus diaduk perlahan hingga santan mulai mendidih. Masukkan potongan ayam dan peterseli dan aduk rata. Masak dengan api kecil selama kurang lebih 30 menit atau hingga bumbu meresap betul. Matikan api dan sajikan ayam.)

Sweet Soy Sauced Egg (Pindang Telur Kecap):

Ingredients:

  • 6 large eggs –> boil for 10 minutes (telur ayam –> rebus selama 10 menit)
  • 1 onion –> sliced onto 4 pieces (bawang bombay dipotong menjadi 4)
  • 3 cloves of garlic –> diced (bawang putih –> potong dadu kecil)
  • 500 ml of chicken stock (kaldu ayam)
  • 3 tablespoons soy sauce (kecap asin)
  • 1 tablespoon oyster sauce (saus tiram)
  • 1/2 teaspoon of salt (garam)
  • 1/8 teaspoon of ground black pepper (bubuk merica hitam)
  • 2 teaspoons sesame oil (minyak wijen)
  • 1 tablespoon of vegetable oil (minyak sayur)

Steps:

1.Peel the egg carefully and set aside.

(Kupas telur rebus dan sisihkan.)

2. Preheat big pan on medium. Pour in vegetable oil and saute the garlic and onion when the oil is hot enough, saute until fragrant.

(Panaskan wajan besar dengan api medium. Tuang minyak sayur dan tumis bawang putih dan bawang bombay hingga harum.)

3. Put in the egg and stir well. Put in the soy sauce, oyster sauce, salt, ground black pepper. Stir well and pour in the chicken stock. Boil for about 20 minutes.

(Masukkan telur dan aduk rata. Tuang kecap asin, saus tiram, garam, bubuk merica hitam. Aduk rata dan tuangkan kaldu ayam. Rebus selama 20 menit.)

4. After 20 minutes, pour in the sesame oil and stir. Done! Serve hot.

(Setelah 20 menit, Tuang minyak wijen dan aduk lagi. Angkat dari api dan sajikan segera.)

Stir Fry Glass Noodle (Suun Goreng):

Fried Glass Noodle

Ingredients:

  • 150 grams of glass noodle (boil for 2 minutes then drain well) (suun –> rebus selama 2 menit lulu sisihkan)
  • 1 large carrot –> but matches (wortel manis –> potong korek api)
  • 3 cloves of garlic –> bashed (bawang putih –> geprak)
  • 2 cloves of shallots –> sliced thin (bawang merah –> iris tipis)
  • 2 tablespoons of soys sauce (kecap asin)
  • 1 tablespoon of oyster sauce (saus tiram)
  • 1 teaspoon of fish sauce (kecap ikan)
  • 3 tablespoons of sweet soy sauce (kecap manis)
  • salt and pepper (garam dan merica bubuk)
  • 2 tablespoons of vegetable oil (minyak sayur)
  • 1 tablespoons of sesame seed oil (minyak wijen)

Steps:

  1. Heat a large pan on medium. Pour in vegetable oil and stir fry the garlic until fragrant, put in the shallots and stir fry again until fragrant. Put in carrot and mix well for 3 minutes. (Panaskan wajan dengan api medium. Tuang minyak sayur dan tumis bawang putih hingga harum. Masukkan bawang merah dan tumis hingga harum. Masukkan wortel dan masak selama 3 menit.)
  2. Put in the glass noodle and season with soy sauce, sweet soy sauce, oyster sauce, fish sauce, salt and pepper. Cook while keep on stirring for about 10 minutes. (Masukkan shun dan bumbui dengan kecap asin, kecap manis, saus tiram, kecap ikan, garam dan merica. Masak selama 10 menit sambil terus diaduk pelan.)
  3. Pour in sesame seed oil and stir again for 1 minute. Serve warm. (Tuang minyak wijen dan aduk rata selama 1 menit. Sajikan panas.)

Mix Veggies Stir Fry (Tumis Sayur Campur):

Mix Veggies Stir Fry or NASI KUNING KOMPLIT

Ingredients:

  • 2 large carrots –> cut small dices (wortel manis –> potong dadu kecil)
  • 100 grams of sweet corn (jagung manis pipil)
  • 20 green beans –> cut small (buncos –> potong kecil)
  • 2 cloves of garlic –> bashed (bawang putih –> geprek)
  • salt and pepper (garam dan merica bubuk)
  • 1 teaspoon of sugar (gula pasir)
  • 1 tablespoon of vegetable oil (minyak sayur)

Steps:

  1. Heat a pan on HIGH. Pour in vegetable oil and stir fry the garlic until fragrant. Put in all of the veggies and stir fry for 2 minutes. Season with salt and pepper, mix well. (Panaskan wajan dengan api BESAR. Tuang minyak sayur dan tumis bawang putih hingga harum. Masukkan semua sayur dan aduk rata selama 2 menit. Bumbui dengan garam dan merica sesuai selera. Aduk rata.)
  2. Put in sugar dan keep on stirring the veggies for another 5 minutes. Turn off the stove and serve immediately. (Beri gula dan aduk rata selama 5 menit lagi. Matikan api dan sajikan sayur segera.)

Spicy Anchovy and Peanuts (Sambal Goreng Teri Kacang):

Spicy anchovy and peanuts

Ingredients:

  • 200 grams of anchovy (ikan teri)
  • 100 grams of peanut (kacang)
  • 6 red jalapeño pepper (lombok merah besar)
  • 5 cloves of garlic (bawang putih)
  • 4 shallots (bawang merah 8 biji)
  • 4 tablespoons of palm rock sugar (gula jawa parut)
  • 2 tablespoons of tamarind water (from blending peeled tamarind and hot water) (air asam)
  • 2 x 3 cm of galangal –> peeled (lengkuas –> kupas)
  • salt and pepper (garam dan merica secukupnya)
  • 2 tablespoons of vegetable oil (minyak sayur)

Steps:

  1. Deep fry the anchovy and peanut separately. Set aside. (Goreng ikan teri dan kacang secara terpisah. Tiriskan dan sisihkan.)
  2. Blend together garlic, shallots, and red pepper. (Haluskan bawang putih, bawang merah, dan lombok merah besar.)
  3. Heat a pan on Medium. Pour in vegetable oil and stir fry the blended spiceds until fragrant. Put in galangal, lime leaves, palm sugar, tamarind water, season with salt and pepper. (Panaskan wajan dengan api medium. Tuang minyak sayur dan tumis bumbu halus hingga harum. Masukkan lengkuas, daun jeruk, gula jawa, air asam, garam dan merica sesuai selera.)
  4. Put in the anchovy and peanuts, stir fry for 5 minutes, while keep on stirring it well. (Masukkan ikan teri dan kacang goreng, aduk rata selama 5 menit. Sisihkan dan sajikan segera.)
