Beef Spicy Gravy “Rendang Sapi” (Bilingual Eng-Indonesia)

Rendang Sapi "Beef Gravy " for NASI KUNING KOMPLIT "Yellow Rice Set" (Bilingual Eng-Indonesia)

Ingredients:

  • 1 kilo of beef (daging sapi –> potong kotak kotak agar besar)
  • 2500 ml of fresh coconut milk from fresh coconut (santan segar)
  • 1 tablespoon of tamarind water (mix together felled tamarind and hot water) (air asam/ asem)
  • 2 tablespoons of grated palm sugar rock (gula Jawa/nira)
  • 1 lemongrass –> bash (serai/sereh –> geprek)
  • 3 key lime leaves (daun jeruk nipis)
  • 100 grams of red jalapeño pepper –> get rid off the seeds (lombok merah besar –> buang bijinya)
  • 5 large shallots (bawang merah 10 biji)
  • 5 cloves of garlic (bawang putih)
  • 5 candle nuts (kemiri)
  • 4 cm of fresh galangal –> peeled dan bashed (lengkuas –> pupas dan geprek)
  • salt and pepper (garam dan merica secukupnya)
  • 2 tablespoons of vegetable oil (minyak sayur)

Steps:

  1. Blend smooth garlic, shallots, red pepper, dan candle nuts. Set aside (Haluskan bawang putih, bawang merah, lombok merah dan kemiri. Sisihkan.)
  2. In a big pot, pour in the oil and stir fry the smooth blend of spices above until fragrant. Put in the key lime leaves, lemongrass and galangal. ( Panaskan wajan dan tuang minyak sayur. Tumis bersama bumbu halls diatas hingga harum. Masukkan daun jeruk nipis, serai/ sereh dan lengkuas.)
  3. Put in the beef chunk and stir fry well for 3 minutes. Pour in the coconut milk, put in the palm sugar and season with salt and pepper. (Masukkan potongan daging sapi dan aduk rata selama 3 menit. Tuang santan dan masukkan gula Jawa, garam dan merica secukupnya.)
  4. Turn the heat to LOW. Cook the beef for 2-3 hours until the color become darker and the coconut milk absorbed/ reduced. Don’t forget to keep on stirring it or it will be burnt. (Kecilkan api dan masak daging selama 2-3 jam atau hingga santan kelapa menyusut dan warna saus berubah menjadi gelap. Aduk terus menerus daging ketika memasak supaya tidak gosong.)
  5. After cooked well, set aside the beef gravy and serve together in big platter with the yellow rice. (Setelah matang, sisihkan rendang dan sajikan bersama dalam nampan nasi kuning.)
