Special Pork Congee/ Porridge “Bubur Babi Spesial” (Bilingual Eng-Indonesia)

Back to my childhood, I used to love this dish so much. Now it’s even more memorable every time I make it myself for my family. This special congee has pork balls inside. Here is the simple recipe for it.

(Teman-teman, bikin bubur babi yuk…aku demen banget sama makanan yang satu ini, gampang ngunyahnya dan lembut pula. Aku suka buburnya yang agak kental. Jadi sediakan kuah/ kaldu babi/ ayam untuk yang lebih suka bubur yang cair. Sesuai selera saja. Bubur ini spesial karena bukan hanya rasa babi tapi juga ada bola bola daging babi didalamnya. Pokoknya maknyus abis. Yuk cobain..)

Special Pork Congee

Ingredients:

– 1 cup of white rice ( 1 cangkir kopi beras putih)

Soup for cooking the rice (Sup untuk memasak beras menjadi bubur):

– 2 liter of water (air putih)

– 3 cloves of garlic –> bashed (bawang putih –> geprek)

– 2 green onions –> cut long (bawang prei –> potong panjang)

– salt and pepper (garam dan merica secukupnya)

Pork Balls (bola-bola daging babinya):

– 300 grams of ground pork (daging babi giling)

– 3 eggs –> beat soft (telur ayam –> kocok rata)

– 3 cloves of garlic –> minced (bawang putih –> haluskan)

– 2 tablespoon of tapioca/ corn starch (tapioka)

– salt and pepper (garam dan merica secukupnya)

Garnish (Pelengkap):

– green onion –> cut small (bawang prei –> potong kecil)

– preserved duck egg –> cut half (telur bitan –> potong dua)

– fried shallot (bawang merah goreng)

– fried dumpling wrapper (kulit pangsit goreng)

Steps:

1. Heat the water in a big pot on medium until boiled.

(Panaskan air dalam panci besar hingga mendidih dengan api sedang.)

2. Make the pork balls: Blend soft all the ingredients. Put in the blended meat inside a plastic bag/ ziploc bag and cut small the corner of it.

(Membuat bola babi nya: blender bersama semua bahan dan masukkan kedalam plastik ziploc. Potong kecil ujung plastik.)

3. Slightly squeeze little amount of the pork blend from the plastic bag onto the water, cut using clean scissors/ knife. The length of the pork balls could be 2 cm. Repeat until the pork done. Put in the bashed garlic and green onions. Season with salt and pepper. Boil them for about 20 minutes. Take the pork balls out of the soup and set it aside.

(Perlahan pencet plastik dan keluarkan daging babi halus ke dalam panci berisi air panas, potong dengan panjang 2 cm per bola babi. Potong dengan gunting atau dengan pisau. Ulangi hingga babi habis. Masukkan bawang putih geprek dan bawang prei panjang. Bumbui dengan garam dan merica sesuai selera. Didihkan selama 20 menit. Keluarkan bola babi dari sup dan sisihkan.)

4. Take HALF amount of the pork and set aside.

(Ambil separuh jumlah bola babi dan sisihkan.)

5. Put in the rice in the pot with the soup inside and cook (while keep on stirring) it until the rice broken and soft, for about 1,5 hours. Turn off the stove and set the congee aside.

(Masukkan beras dalam panci dengan sup didalamnya dan masak dengan terus menerus diaduk hingga beras pecah dan lembut benar selama1,5 jam. Matikan kompor dan sisihkan panci.)

6. Blend half of the pork balls smooth and mix it with the congee.

(Blender separuh dari bola-bola babi hingga halus, lalu masukkan kedalam bubur, campur rata.)

7. Mix together the pork congee and the other half of pork balls.

(Campur bubur dengan sisa (separuh) bola babi yang tersisa. Aduk rata.)

8. Serve the pork congee in a bowl together with fried shallots, green onions, with me I love the preserved duck egg, and fried dumpling wrappers. Enjoy.

(Sajikan bubur bersama dengan bawang merah goreng, bawang prei potong, telur bitan, dan gorengan kulit pangsit.)
