Braised Pork Belly “Babi Kecap” (Bilingual Eng-Indonesia)

One of my fave dish, very simple and easy to make yet need precise timing for best result. Very good to served with steamed rice or potato. Here is the recipe for it.

(Teman- teman ini aku share resep untuk bikin Babi Kecap khas rumahan. Rasanya dominan manis gurih dengan aroma asli babi yang wangi. Cocok untuk lauk makan malam bersama keluarga atau pas lagi ada tamu. Yuk, bikin bareng-bareng!)

Braised Pork Belly "Babi Kecap" (Bilingual Eng-Indonesia)

Ingredients:
– 300 grams of pork belly –> cut 4-5 cm length and 2,5 cm thick (samcam –> potong panjang 4-5 cm dan tebalnya 2,5 cm)

– 250 ml of water (air putih)

– 2 tablespoons of soy sauce (kecap asin)

– 2 tablespoons of sweet soy sauce (kecap manis)

– 1 tablespoon of Tsiao Sing cooking wine (angciu/ arak masak)

– 2 tablespoon of brown sugar/ white sugar (gula pasir/ brown sugar juga boleh)

– 6 cloves of garlic –> bashed (bawang putih –> geprek)

– 2 star anise –> (pekak)

– 1 tablespoon of vegetable oil (minyak sayur)

– salt and pepper (garam dan merica secukupnya)

Steps:

1. Heat a pot on MEDIUM, pour in vegetable oil and stir fry the garlic until fragrant. Put in the pork and brown sugar/ white sugar, stir fry until the sugar got caramelized.

(Panaskan wajan dengan api MEDIUM, tuang minyak sayur dan jika sudah panas tumis bawang putih hingga harum. Masukkan potongan samcam dan gula pasir/ brown sugar dan aduk terus hingga gula mencair berwarna kecoklatan.)

2. Season with soy sauce, sweet soy sauce, cooking wine, salt and pepper. Stir fry the pork for 2 minutes.

(Bumbui dengan kecap asin, kecap manis, arak/ angciu, garam dan merica secukupnya. Aduk rata selama 2 menit.)

3. Pour in the water and star anise. Braise the pork until they are soft for about 1 hour on small-medium heat. The pork will absorb the water and seasoning well. Set aside and serve warm.

(Tuang air dan masukkan pekak. Rebus daging babi hingga empuk selama 1 jam denga api sedang. Daging akan menyerap air dan bumbu hingga empuk. Sisihkan dan sajikan panas.)
