Chinese Rice Noodle from Scratch & Stir Fried Rice Noodle “Kweetiaw Goreng” (Bilingual Eng-Indonesia)

Make this fresh Rice noodle you used to see on Asian Store and serve yummy stir fried Rice Noodle a.k.a “Char Kwee Tiaw” at home soon. I use simple loaf pan and large pan for making the noodle. I water bath instead steaming it. Here we go!

(Teman-teman, bikin Kweetiaw segar sendiri yuk di rumah! Cara bikin dan bahan-bahan yang digunakan simple banget. Sediakan dandang atau panci besar yang bisa diisi loyang bulat atau loyang roti di dalamnya untuk mencetak/ membuat kweetiaw nya. Yuk, cobain!

Rice Noodle from Scratch and Stir Fried Rice Noodle (Kweetiaw Goreng) (Bilingual Eng-Indo)

Ingredients:

Noodle Batter (Kweetiaw): (2 portions)

– 1 cup of rice flour (151 gr) (Tepung beras)

– 1/2 cup of tapioca flour (85 gr) (tepung tapioka)

– 1 1/2 cups of room temperature water (354 ml) (air suhu ruang)

–  salt (garam secukupnya)

–  some vegetable oil (minyak sayur bersih)

Stir Fried Rice Noodle (“Char Kwee Tiaw”):

– Rice Noodle (kweetiaw segar)

– 1 tablespoon of vegetable oil (minyak sayur)

– 2 Chinese sausage –> slice thin (lapcheong atau sosis atau daging lainnya –> iris tipis)

– 2 bunches of Gai Lan –> cut 4-5 cm length (sawi hijau –> potong panjang)

– 2 cloves of garlic –> bashed (bawang putih –> geprek)

– 2 green onions –> cut short/long (bawang prei –> potong pendek/ panjang)

– 1 cup of bean sprout (1 cangkir taoge)

– 2 tablespoons of soy sauce (kecap asin)

– 1 tablespoon of oyster sauce (saus tiram)

– 3 tablespoons of sweet soy sauce (kecap manis)

– salt and pepper (garam dan merica bubuk sesuai selera)

– chili flakes (optional) (cabe kering (boleh pakai/ boleh tidak))

Steps:

Making the Noodle (Membuat Kweetiaw):

1. Preheat large pan with 1 inch of water and boil it, cover the pan. (Panaskan panci besar berisi 2-3 cm air didalamnya, tutup panci dan didihkan.)

2. Mix together all the rice flour, the tapioca flour, and salt in a big bowl and slightly pour the water gradually while keep on mixing the batter. Mix well and set aside. (Campur bersama tepung beras, tepung tapioka, dan garam dalam sebuah mangkuk besar dan perlahan tuang air ke dalamnya sambil terus di aduk rata. Aduk rata dan sisihkan.)

3. Take one loaf pan or cake pan and grease it thin with vegetable oil using fine brush. Stir the batter again and take 1 ladle of it and pour it into the pan. Put the pan in the large pan with water in it and cover with the lid. Cook for 20-40 seconds. (Siapkan sebuah loyang roti/ loyang kue bulat dan olesi permukaan dalamnya dengan minyak sayur dengan menggunakan kuas bersih. Aduk adonan dan ambil 1 sendok sup adonan dan tuangkan ke dalam loyang, ratakan dan letakkan loyang dalam panci berisi air mendidih, tutup panci. Masak selama 30-40 detik.)

4. Take the pan out and brush the surface of the noodle with vegetable oil again, scrape it off using rubber spatula and set it aside. Repeat making the noodle until all the batter done. (Keluarkan loyang dan olesi permukaan kweetiaw dengan minyak sayur lagi, perlahan lepas/kupas lembaran kweetiaw dari loyang dan sisihkan. Ulangi hingga adonan habis.)

5. Cut the noodle sheet onto 1/2 inch width, set aside. (Potong lembaran kweetiaw dengan pisau menjadi ukuran 1-1,2 cm)

Cooking the Stir Fried Rice Noodle (Memasak Kwee Tiaw goreng):

1. Heat your wok/ pan on HIGH. Pour in vegetable oil and stir fry the garlic until fragrant. Put in chinese sausage and cook of 1 minute only. Put in the Gai Lan and cook for seconds, put in the bean sprout and cook for seconds, put in the rice noodle and season with soy sauce, oyster sauce, sweet soy sauce, salt and pepper. Keep on stirring and turn the stove off when all of the ingredients mixed well. (Panaskan wajan/ wok dengan api BESAR. Tuang minyak sayur dan tumis bawang putih hingga harum. Masukkan potongan lapcheong dan masak selama 1 menit. Masukkan irisan sawi hijau dan tumis beberapa detik, masukkan taoge dan tumis sebentar saja, masukkan kweetiaw segar dan aduk rata. Bumbui dengan kecap asin, saus tiram, kecap manis, garam dan merica sesuai selera. Aduk aduk rata selama memasak dan segera matikan api jika masakan telah matang dan tercampur rata.)
2. Put the noodle on a plate and sprinkle with green onion and chili flakes (optional). Serve warm. (Pindahkan kweetiaw pada sebuah piring dan taburi dengan bawang prei iris dan cabe kering. Sajikan panas.)

    Beautiful consistent sheets of noodle happens out when there’s a properly leveled machine making it. I’m used to that and that as my standard. At home, you get thick uneven results.

    I guess there’s a certain rustic charm to that, but I’ve grown up on the factory made stuff.

      too right Bill, I saw some store noodle with pretty cut in Asian store here, but I don’t know, somehow I choose to make it by myself for my kid loves them. For home cooking i think using water bath/ steaming with baking pan is enough. Ahaaa..I thought of trick to make them even on thickness my putting the pan on the water for several seconds until they firm up a little bit, just before I set it alone in the pot. Maybe it will help.
