Indonesian Pancake with Palm Sugar Sauce “Serabi Kuah” (Bilingual Eng-Indonesia)

Remembering my childhood back to my hometown Kalibaru, Banyuwangi, East Java- Indonesia. My grandmother often takes me to traditional market near our home, and this is one of my fave snack, we call it “Serabi Kuah”, “Serabi” refers to “pancake” and “Kuah” refers to “Sauce/Soup”. Well, try to find the the ingredients today at Asian Market and made it for dessert tonight. Here is my simple recipe for “Serabi Kuah”

(Teman-teman, mengingat masa kecil dulu di desa kelahiran Kalibaru Banyuwangi awal 1990 an, paling seneng kalo diajak nenek ke pasar becek dekat rumah. Biasanya selalu pulang beli Serabi Kuah. Doyan banget sama camilan yang satu ini. Tadi siang beli bahan bahannya di toko Asia dan malem ini bikin buat pendamping nonton TV. Ini resep sederhana Serabi Kuah buatan saya, silahkan mencoba)

Ingredients:

Pancake (Serabi):

– 250 ml coconut milk (santan encer)

– 150 grams of all purpose flour (tepung terigu)

– 1 egg (telur ayam)

– 1 tablespoon of sugar (gula pasir)

– 1 teaspoon of baking powder

– salt (garam secukupnya)

Sauce (Kuah):

– 50 grams of palm sugar rock (Gula Aren)

– 150 ml of coconut milk (santan encer)

– 1 tablespoon of sugar (gula pasir)

– salt (garam secukupnya)

– 1 Pandan leave (daun pandan)

Steps:

1. In a bowl, mix together the flour, egg, coconut milk, sugar and salt. Mix only until they blended, not too much. Rest for 10 minutes.

(Campur rata semua bahan untuk serabi dan aduk rata, jika adonan sudah rata jangan diaduk lagi. Biarkan selama 10 menit.)

2. Make the sauce: put all of the ingredients in a small sauce pan and bring it to boil while keep on STIRRING it. After boiled, turn off the heat and set the sauce aside.

(Membuat sausnya: campur semua bahan kuah dalam sebuah panci kecil lalu didihkan dengan api medium, aduk terus selama proses memasak. Matikan api setelah kuah mendidih dan sisihkan saus.)

3. Heat non stick pan on medium, when it is hot enough pour some batter making pancake, wait until it’s bubbly and the it makes holes around the surface, cover the pan with the lid and turn LOW the heat (DON’T FLIP THE PANCAKE!). When the surface of the pancake cooked well, take the pancake off the pan and set aside. Repeat until all of the batter done.

(Panaskan wajan TEFLON dengan api medium, ketika wajan cukup panas, tuang adonan kisaran 2-3 sendok makan. Tunggu hingga mulai bermunculan gelembung pada permukaan serabi, tunggu hingga mulai terbentuk lubang lubang pada permukaan serabi lalu tutup wajan, kecilkan api dan masak hingga seluruh permukaan serabi matang (JANGAN BALIK SERABI! Jika sudah matang, angkat serabi dari wajan dan sisihkan. Ulangi hingga adonan habis.))

4. Serve the “Serabi Kuah” by putting the pancakes on a plate and pouring some of the sauce. Enjoy!

(Sajikan serabi kuah dengan meletakkan serabi pada sebuah piring dan tuangi dengan sausnya. Selamat menikmati!)
