Sweet and Sour Fried Pork Short Ribs “Baikut Goreng Asam Manis” (Bilingual Eng-Indonesia)

Serve this sweet and sour savory dish for your dinner tonight. Serve it with your fave carbs. Here is the recipe.

Sweet and Sour Deep Fried Pork Short Ribs "Baikut Goreng Asam Manis" (Eng-Indonesia)

Ingredients:

– 300 grams of ribs/ short ribs (iga babi/baikut)

– 3 tablespoons of soy sauce (kecap asin)

– 1 cup of all purpose flour (124 grams) (tepung terigu)

– 1 cup of cold water (236 ml) (air dingin)

– 1 teaspoon of salt (garam)

– 1 teaspoon of pepper (merica bubuk)

– 1/4 cup of all purpose flour (extra for coating) (31 grams) (tepung terigu untuk melapisi baikut)

– oil for frying (minyak untuk menggoreng)

Sauce (Sausnya):

  • 2 tablespoons of vegetable oil (minyak sayur)
  • 3 cloves of garlic –> slice thin (bawang putih –> diiris tipis)
  • 1 1/2 tablespoons of tomato sauce (saus tomat)
  • 1/2 teaspoons of chili sauce (saus sambal botolan)
  • 1/2 teaspoons of soy sauce (kecap asin)
  • 1/2 teaspoons of cheyenne pepper (bubuk cabe merah besar)
  • 1/8 teaspoons of salt  (garam)
  • 1/2 tablespoons of sugar (gula pasir)
  • 1/2 teaspoons of sesame oil (minyak wijen)
  • 1/2 cup of chicken stock (kaldu ayam)
  • 1/2 teaspoons of potato starch –> mixed with 2 tablespoons of water (tepung kanji –> campur dengan 2 sendok makan air)

 Steps:

1. Wash and clean the short ribs gently. Rub the ribs with soy sauce and set aside for 1 hour in fridge.

(Cuci bersih dan bersihkan baikut/iga babi. Olesi permukaan iga dengan kecap asin dan biarkan dalam lemari es selama 1 jam)

2. Make the sauce: Heat a frying pan on medium dan pour in vegetable oil. Saute the garlic until fragrant.  Pour in the tomato sauce, chili sauce, cheyenne pepper, salt, sugar, sesame oil, chicken stock. Bring it to boil. When it’s boiled, pour in potato starch water and mix well until it gets thicker.

(Panaskan wajan dengan api medium, tuang minyak sayur kedalamnya. Jika minyak sudah panas, tumis bawang putih hingga harum. Tuang saus tomat, saus sambal, bubuk cabe merah, garam, gula, gula, minyak wijen dan kaldu ayam. Aduk dan didihkan lalu tuang tepung kanji yang telah dicampur air.)

3. Mix together 1 cup of flour, salt, pepper, and cold water. Then place the batter in a plate. Take another plate and put in 1/4 cup of flour.

(Campurkan 124 gram tepung terigu dengan garam, merica bubuk dan air dingin. Tuang kedalam sebuah piring. Siapkan piring lainnya dan isi dengan 31 gram tepung terigu.)

 4. Preheat your frying pan in medium with lot of oil enough to deep fry the ribs. Wait until the oil is hot enough to fry.

(Panaskan penggorengan yang diisi minyak yang cukup banyak untuk menggoreng baikut. Tunggu hingga minyak cukup panas untuk menggoreng.)

 5. Dredge the ribs on the dry all purpose flour. Then, dip in into the batter and drip the excess batter.

(Baluri potongan iga/baikut dengan tepung terigu kering, dan celupkan di adonan cair, teteskan adonan yang berlebih pada iga.)

 6. Fry the ribs right away until golden brown. Then, take them out of the pan and drain the excess oil.

(Goreng segera iga/baikut tepung hingga kuning keemasan. Angkat dan tiriskan)

7. Mix the ribs and the sauce and bring to boil in a pan.

(Campur baikut dengan bumbu nya dan panaskan hingga mandidih dan saus kental.)

 8. Serve warm with your fave carbs.

(Sajikan hangat dengan menu utama pilihanmu.)
