Vegetarian Red Rice Bibimbab “Bibimbab Nasi merah Vegetarian” (Bilingual Eng-Indonesia)

Actually I made this dish just only to finish my vegetable remains in the fridge just before shopping and use Bhutanese Red Rice as the base. This is simple Korean Bibimbab, mixed rice and vegetable, without any meat. Super economic but very yummy. I used seaweed, caramelized onion, cucumber, black pepper mushrooms and carrot for the toppings. Here we go!

(Teman-teman, ini aku share resep untuk membuat Bibimbab Vegatarian di rumah ya. Bahan-bahan yang digunakan mengikuti sisa sayuran yang ada di kulkas aja, kebetulan ada jamur champignon, bawang Bombay, wortel, dan rumput laut. Maka jadilah Bibimbab ala kadarnya ini. Monggo, dicoba..)

Vegetarian Red Rice Bibimbab "Bibimbab Nasi Merah Vegetarian"

Ingredients: (2 portion)

  • 2 bowls of steamed rice (I use organic red rice) (nasi, boleh putih atau nasi merah)
  • 1 onion –> sliced thin (bawang Bombay –> iris tipis)
  • 1/2 cucumber –> cut onto matches shape (mentimun –> potong korek api)
  • 30 grams of dried seaweed (soaked in cool water for 30 minutes before cooking just to remove any dirt or sand from it) (rumput laut kering –> rendam 30 menit sebelum diolah, untuk menghilangkan kotoran atau pasir yang menempel.)
  • some soy sauce (kecap asin)
  • 1 large carrot –> cut onto matches shape (wortel –> potong korek api)
  • 3 Champignon mushrooms –> sliced thin (jamur Champignon –> iris tipis)
  • some salt and pepper (garam dan merica secukupnya)
  • some Korean Gojujang (red pepper paste)
  • some vegetable oil (minyak sayur)

Steps:

  1. Boil the seaweed for 5-10 minutes in a pot/ sauce pan. The drain it evenly. Set aside. (Rebus rumput laut selama 5-10 menit setelah diambil dari air rendaman. Kemudian tiriskan dan sisihkan. Beri kecap asin dan merica secukupnya.)
  2. Heat a pan on HIGH , pour in some vegetable oil and stir fry the carrots for 1 minute, then take the carrot out of the pan. Set aside. (Panaskan wajan dengan api BESAR, tuang minyak sayur secukupnya dan tumis wortel selama 1 menit saja. Keluarkan wortel dari wajan dan sisihkan.)
  3. Still on the same pan, pour some vegetable oil again and stir fry the mushroom for couple minutes or until they are soft. Season with salt and pepper. Then, take the mushrooms out of the pan and set aside. (Masih di wajan yang sama, tuang minyak sayur secukupnya lalu tumis jamur sambil diberi garam dan merica secukupnya, masak hingga jamur layu. Angkat jamur dari wajan dan sisihkan.)
  4. Still on the same pan, pour some vegetable oil again and stir fry the onion for couple minutes or until they are soft and brown while keep on stirring it. (Masih di wajan yang sama, tuang minyak sayur secukupnya lalu tumis bawang Bombay sambil terus diaduk, masak hingga bawang layu dan kecoklatan. Angkat bawang dari wajan dan sisihkan.)
  5. Assembling the Bibimbab: Take one bowl with rice in it, then press the surface of the rice evenly to make it flat. Place some carrot, cucumber, caramelized onion, seaweed and mushroom on the top of the rice. Don’t forget to add some Gojujang according to your preference. You can sprinkle some sesame seed if you have. Mix all of them before eating. Enjoy! (Menata Bibimbab: Ambil mangkok berisi nasi kemudian ratakan permukaan nasi. Letakkan wortel, mentimun, bawang Bombay tumis, rumput laut, dan jamur tumis diatas nasi. Jangan lupa beri Gojujang secukupnya sesuai selera. Aduk rata sebelum dimakan. Selamat menikmati!)
