Spicy Sweet Tempeh and Potatoes “Sambal Goreng Tempe Kentang Kering” (Bilingual Eng-Indonesia)

Here is one of famous Indonesian dishes, we call it “Sambal Goreng Tempe Kentang Kering”. It’s basically dish of tempeh and potatoes, fried before further cooked with special spices. It’s so comfortable to be eaten with warm steamed rice and a tall glass of plain tea. Yum yum yum…here is the recipe!

(Teman-teman, ini aku share resep buat Sambal Goreng Tampe Kentang Kering ala aku sendiri. Karena keterbatasan bahan bahan di sini, maka banyak bahan bumbu yang aku ganti dengan bahan lain. Rasanya enak dan sesuai selera keluarga. Dari dulu sampe sekarang resep untuk hidangan ini nggak pernah berubah. Yuk, cobain!)

Spicy Sweet Tempeh Potatoes "Sambal Goreng Tempe Kentang Kering" Spicy Sweet Tempeh Potatoes "Sambal Goreng Tempe Kentang Kering"

Ingredients:

– 150 grams of tempeh –> cut dice (but not too small) (tempe –> potong dadu)

– 150 grams of potatoes –> peeled, cut in half and slided very thin (kentang –> kupas, potong dua dan iris sangat tipis)

– 3 cloves of garlic –> mashed (bawang putih –> haluskan)

– 3 cloves of small shallots –> mashed (bawang merah –> haluskan)

– 1 medium tomato –> diced (tomat ukuran medium –> potong dadu kecil)

– 2 red jalapenos –> slice and take the seeds out then slice thin (lombok merah –> belah, buang bijinya dan iris tipis)

– 1 lemongrass –> bashed (serai –> memarkan)

– 3 bay leaves (boleh juga pakai daun salam)

– 2 tablespoons of sweet soy sauce (kecap manis)

– 2 tablespoons of brown sugar (brown sugar)

– salt and pepper (garam dan merica secukupnya)

– some oil for deep frying (minyak untuk menggoreng)

Steps:

1. Deep fried the potatoes and tempeh in frying oil until they are dry. Drain the excess oil properly. Set aside (Goreng tempe dan kentang hingga kering, tiriskan dan sisihkan.)

2. In a big frying pan, pour in 2 tablespoons of oil on medium. Stir-fry the garlic and shallot until fragrant and little bit dry. Then put in the tomatoes, bay leaves, and lemongrass then cook again until tomatoes get little bit dried while keep on stirring. (Panaskan wajan dengan api medium, tuang 2 sendok makan minyak dan tumis bawang putih dan bawang merah hingga harum dan sedikit mengering. Masukkan tomat, daun salam, dan serai dan tumis hingga cairan tomat mongering sambil terus diaduk)

3. Put in red jalapenos and season with sweet soy sauce, brown sugar, salt and pepper. Put in the tempeh and potatoes and cook (keep on stirring) until all of the spices/ sauce absorbed and the dish remains little bit dry. Take the pan off the stove and lift the dish to a plate. Serve and enjoy! (Masukkan lombok merah potong dan bumbui dengan kecap manis, brown sugar, garam dan merica. Masukkan tempe dan kentang, aduk rata terus menerus sambil dimasak hingga bumbu meresap dan mengering. Angkat wajan dari api dan pindah hidangan pada sebuah piring. Sajikan segera.)
