Black Pepper Caramel Chicken “Ayam Karamel Lada Hitam” (Bilingual Eng-Indonesia)

Caramel + black pepper = indulging taste. Try this super delicious dish soon! You can both deep fried or bake the chicken following your preference. Here is the recipe.

(Teman-teman, ini aku share resep untuk bikin Ayam Karamel Lada Hitam di rumah. Cara bikinnya gampang tapi hasilnya berasa makan di restoran. Ayam bias digoreng minyak atau dioven. Yuk, cobain!)

Black Pepper Caramel Chicken "Ayam Karamel Lada Hitam"

Ingredients:

  • 500 grams of chicken (you can use any part of it you like, I used thigh) (daging ayam, boleh bagian manapun, aku pakai bagian paha bawah)
  • 2 cloves of garlic–> bashed and chopped (bawang putih–> geprek dan cacah kecil)
  • 1 onion–> sliced thin (bawang Bombay–> iris tipis)
  • 1 tablespoon of butter
  • 3 tablespoon of white sugar (gula pasir)
  • ½ cup of water (air putih 118 ml)
  • ¼ teaspoon of black pepper (merica hitam)
  • some salt (garam secukupnya)

Steps:

  1. 2 hours before cooking, season the chicken with salt and pepper and set it aside covered in fridge. (2 jam sebelum dimasak, bumbui ayam dengan garam dan merica, lalu bungkus rapat/ letakkan dalam tempat bertutup dalam lemari es.)
  2. After 2 hours, preheat your oven to 180 C. Or you can deep fried the chicken until they are brown and cooked completely on medium high. Set the chicken aside. (Setelah 2 jam, panaskan oven hingga 180 C. Atau ayam boleh digoreng hingga kecoklatan dan matang sepenuhnya dengan api medium. Tiriskan dan sisihkan ayam.)
  3. Heat a large sauce pan/ frying pan on HIGH. Melt the butter and stir-fry the garlic and onion until fragrant. Put in sugar and let it melt and forms caramel (don’t overcook or the caramel will be burnt). After the caramel done, pour in the water and mix well. Put in the chicken and mix again well until the chicken soaked in the sauce, for about 5-10 minutes, while keep on stirring it. (Panaskan penggorengan/wajan dengan api BESAR. Lelehkan butter dan tumis bawang putih dan bawang Bombay hingga harum. Masukkan gula dan biarkan meleleh dan membentuk caramel kecoklatan, perhatikan jangan sampai caramel gosong. Tuang air dan aduk rata sejenak,lalu masukkan ayam. Aduk-aduk perlahan ayam hingga ayam terendam bumbu seluruhnya kurang lebih selama 5-10 menit.)
  4. Sprinkle black pepper and some salt and mix well. Move the chicken onto a plate and serve warm. (Taburi dengan merica hitam dan garam secukupnya. Aduk rata. Pindahkan ayam pada sebuah piring dan sajikan segera.)
