Daikon Radish and Carrot Cake “Kue Lobak Wortel” (Bilingual Eng-Indonesia)

I love daikon radish, it’s very yummy to be made as fried cake too. Basically it’s daikon radish and carrot batter, steamed and the cut and deep fried. Yet, I am using egg as addition to add more delicacy on it. Here is the recipe!

(Teman-teman, ini aku share resep bikin kue Lobak putih wortel ya, biasanya yang dijual di resto dim sum, kue lobak putih modelnya pucat dan nggak seberapa bikin ngiler, tapi kemarin aku bikin warnanya keemasan campur oranye oranye dikit gitu kena wortelnya, rasanya pun sedap. Agak beda bahan sama kue lobak kebanyakan. Yuk cobain!)

Daikon radish and carrot cake "kue lobak wortel"

Ingredients:

– 2 x 3/4 cup of grated daikon radish (2 x 3/4 cangkir lobak putih parut)

– 2 carrot –> grated (wortel, kalau bisa pilih yang impor lebih banyak dagingnya –> diparut juga)

– 2 egg (telur ayam)

– 100 grams of cup rice flour (tepung beras)

– 2 tablespoon of potato starch/ tapioca flour (tepung tapioka)

– 80 ml of chicken stock (kaldu ayam)

– salt and pepper (garam dan merica secukupnya)

Steps:

1. Mix the radish and carrot in a blender and blend them smooth. Drain the natural juice from the radish carrot, make sure you drain it perfectly.

(Campur lobak putih dan wortel parut dalam blender dan haluskan, Tiriskan air dari lobak dan wortel hingga sedikit kering.)

2. In a bowl, put in the radish and carrot pure, add egg, flour and starch, and chicken stock. Season with salt and pepper.

(Pada sebuah mangkuk, campur bersama lobak dan wortel, telur, tepung beras dan tapioca. Tuang kaldu ayam dan beri garam dan merica secukupnya.)

3. Heat a teamer with enough water to steam the cake on medium.

(Panaskan dandang dengan cukup air untuk mengukus kue dengan api medium.)

4. Put the batter in a small pan/ mould and steam it for 30 minutes. Turn off the stove after done. Take out the cake and cut following your preference.

(Tuang adonan kedalam wadah/ loyang/ cetakan dan kukus selama 30 menit. Matikan api dan keluarkan kue yang telah matang, potong sesuai selera, aku pake bentuk bulat.)

5. Heat a frying pan with enough vegetable oil on medium. Deep fry the cake until golden brown. Drain the excess oil and serve immediately.

(Panaskan wajan dengan cukup banyak minyak sayur untuk menggoreng kue lobak wortel. Goreng kue hingga keemasan. Tiriskan dan sajikan panas.)
