Improvised “BAKCANG” Sticky Rice Dumplings (Bilingual Eng-Indo)

We live now in a place where I cant find any lotus leaves to wrap this snack. This is called Bakcang a.k.a Zongzi, a sticky rice dumping filled with braised pork, taro, shiitake mushrooms, duck egg, Chinese sausage and etc. Yet here I only filled them with braised pork and shiitake mushrooms. I came to a point where I have to fill my craving for this snack using little ingredients remain at home. Well, it still went very nice and no more craving for Bakcang. Yummm

(Teman-teman, ini aku share resep untuk bikin bakcang tapi nggak pake daun lotus, karena memang akau nggak punya. Jadi aku improvisasi jadi bakcang model nasi tim gitu, dibentuk pake cetakan mangkok, ketannya aku masak di rice cooker, pake babi kecap plus jamur shiitake. Ada beberapa tips untuk resep ini, semua lengkap di langkah langkah yang kutulis ya. Yuk, cobain!)

Ingredients:

Braised Pork (Babi Kecapnya):

– 350 grams of pork belly –> cut chunk (samcam/samsam–> potong kotak)

– 8 pieces of dried Shiitake mushrooms –> soak in water for overnight (Jamur Shiitake kering –> rendam dalam air semalaman)

– 3 cloves of garlic (bawang putih)

– 1 tablespoon of vegetable oil (minyak sayur)

– 5 cups of water (air putih 5 cangkir)

– 4 tablespoons of soya sauce (kecap asin)

– 4 tablespoons of sweet soy sauce (kecap manis)

– 1/2 teaspoons of salt (garam)

– 1 tablespoons of sugar (gula)

– 1/8 teaspoons of ground black pepper (bubuk merica hitam)

Sticky Rice (Untuk Ketannya):

– 350 grams of sticky rice –> soak in water for 1 hour before cooking (beras ketan –> rendam dalam air biasa selama 1 jam sebelum di masak)

Steps:

1. Heat a big pot on medium, then pour in vegetable oil, saute the garlic until fragrant.

(Panaskan wajan besar dengan api medium, tuang minyak goreng, lalu tumis bawang putih hingga harum.)

2. Put in the cut pork belly and mix well for 3 minutes. Then season with soy sauce, sweet soy sauce, salt, sugar, and pepper, mix again for 5 minutes while keep on stirring.

(Masukkan potongan samcam/samsam dan aduk rata selama 3 menit. Bumbui dengan kecap asin, kecap manis, garam, gula, dan bubuk merica, aduk lagi terus selama 5 menit.)

3. Pour in the water and boil for 30 minutes. Take 3 cups of the sauced water and place it in a bowl

(Tuang air dan rebus selama 30 menit hingga samsam agak empuk. Ambil 3 cangkir kuah kecap dari wajan dan sisihkan di dalam mangkuk.)

4. Drain the sticky rice well and put it in the rice cooker pot, pour in the sauced water and cook the sticky rice inside the rice cooker following instruction of your rice cooker.

(TIriskan air rendaman beras ketan, masukkan beras ketan dalam panci rice cooker, tuang dengan kuah kecap dan masak sesuai instruksi rice cooker.)

5. Boil the pork in remain sauce until the sauce reduced well and get sticky, remember to keep on stirring the pork softly for even cooking and preventing burning.

(Rebus babi dalam kuah kecap lagi hingga kuah mengental dan hampir asat, selalu aduk pelan-pelan salama merebus sehingga bumbu terserap merata dan mencegah gosong.)

6. Prepare a rice mould, the slightly brush the inner surface of the mould with vegetable oil. Fill 1/3 part of the mould with sticky rice making the first layer, then place some pork and mushroom on the center of the rice making the filling layer, then the last, cover with sticky rice again and push it softly to make sure the sticky rice comes together. Slightly take off the rice from the mould using a knife and rubber spatula. Place it in a plate and ready to serve warm. Enjoy!

(Siapkan cetakan nasi yang diinginkan, perlahan olesi permukaan dalam cetakan dengan minyak goreng. Isi 1/3 bagian cetakan dengan ketan membentuk lapisan pertama, Letakkan samsam dan jamur di tengah nya membentuk lapisan kedua. Terakhir, tutup lagi dengan ketan dan tekan tekan ketan hingga semua bagian ketan menyatu. Perlahan lepas ketan dari cetakan dengan menggunakan spatula karet atau pisau. Pindahkan di piring dan sajikan panas!)
