General Tso Chicken “Ayam Jenderal Tso” (Bilingual Eng-Indo)

Proclaim to be Hunanese dish yet very popular in the US and Canada, here is the famous General Tso’s Chicken. It’s simply deep fried chicken fillet with thick sweet salty spicy sauce. I didn’t use any rice vinegar yet I use lemon juice instead in this dish, since my little one join us for dinner and he was so happy with it. Don’t keep the chicken fries too long in the sauce while cooking and serve immediately to keep the crunchiness of it. Here we go!

(Teman-teman ini auk share resep bikin General Tso’s Chicken yang terkenal di USA dan Canada. Hampir semua Chinese Restaurant disana memiliki menu ini. Rasanya hampir sama kayak Koloke cuman cenderung kurang manis. Resep aslinya menggunakan cuka beras khas China, tapi kali ini aku nggak pake cuka karena si kecil ikutan nimbrung makan malem dan dia seneng banget makan ini. Ayam gorengnya jangan kelamaan didalam saus dan harus segera disajikan supaya tetap renyah pas dimakan. Yuk, cobain bareng bareng!)

General Tso Chicken

Ingredients:

CHICKEN FRIES

  • 400 grams of chicken breast –> cut medium stick long (dada ayam –> dipotong kotak

   persegi panjang)

  • 2 tablespoons of soy sauce (kecap asin)
  • 2 tablespoons of lemon juice (perasan lemon)
  • 1 cup of all purpose flour (tepung terigu serba guna 1 cangkir)
  • 1/2 cup of rice flour (tepung beras 1/2 cangkir)
  • 1 teaspoon of baking powder (baking powder)
  • 1/2 teaspoons of salt (garam)
  • 1/4 teaspoons of ground black pepper (bubuk merica hitam)
  • Some cold water (air putih dingin)
  • Oil for frying (minyak untuk menggoreng)

SAUCE

  • 2 tablespoons of vegetable oil (minyak sayur)
  • 3 cloves of garlic –> slice thin (bawang putih –> diiris tipis)
  • 1 1/2 tablespoons of tomato sauce (saus tomat)
  • 1/2 teaspoons of chili sauce (saus sambal botolan)
  • 1/2 teaspoons of soy sauce (kecap asin)
  • 1/2 teaspoons of cheyenne pepper (bubuk cabe merah besar)
  • 1/8 teaspoons of salt  (garam)
  • 1/2 tablespoons of sugar (gula pasir)
  • 1/2 teaspoons of sesame oil (minyak wijen)
  • 1/2 cup of chicken stock (kaldu ayam)
  • 1/2 teaspoons of potato starch –> mixed with 2 tablespoons of water (tepung kanji –> campur dengan 2 sendok makan air)

ADDITION

  • 100 grams of broccoli –> cut per cluster and boiled for 5 minutes (brokoli –> dipotong kuntum dan direbus selama 5 menit)

Steps:

  1. Marinade the cut chicken in lemon juice and soy sauce for 1 hour in refrigerator. Take the chicken out from fridge after 1 hour.

(Rendam potongan ayam dalam campuran air lemon dan kecap asin, simpan dalam lemari es selama 1 jam. Keluarkan ayam dari kulkas setelah 1 jam.)

  1. In a bowl, mix the flour, rice flour, baking powder, salt and pepper. Put in all of the chicken and cover evenly with flour mix, take the chicken out and tap out the excess flour. One by one, dip the chicken in the cold water and put it back into the flour mix to be covered evenly again. Take out the chicken and tap the excess flour.

(Pada sebuah mangkuk, campur tepung terigu, tepung beras, baking powder, garam dan bubuk merica hitam. Masukkan semua potongan ayam dan ratakan tepung di seluruh permukaan ayam. Keluarkan ayam dan tiriskan sisa tepung yang tidak menempel. Masukkan satu potong ayam kedalam air dingin dan segera gulingkan ayam pada tepung lagi. Keluarkan potongan ayam dan tiriskan sisa tepung yang tidak menempel. Ulangi hingga semua potongan ayam terlapisi tepung. )

  1. In a deep frying pan, heat the oil in medium. When it’s hot enough, fry the chicken for 7-10 minutes or until golden brown. Sieve the excess oil well.

(Pada sebuah penggorengan, panaskan minyak untuk menggoreng. Jika minyak sudah cukup panas, goreng ayam hingga kecoklatan selama kurang lebih 7-10 menit. Tiriskan)

  1. Heat a frying pan on medium dan pour in vegetable oil. Saute the garlic until fragrant.  Pour in the tomato sauce, chili sauce, cheyenne pepper, salt, sugar, sesame oil, chicken stock. Bring it to boil. When it’s boiled, pour in potato starch water and mix well until it gets thicker. Put in the chicken fries and mix well for 20 seconds. Remove out the chicken from the pan onto a plate. Put the boiled broccoli on the side of the chicken and serve immediately to serve the super crunchy chicken.

(Panaskan wajan dengan api medium, tuang minyak sayur kedalamnya. Jika minyak sudah panas, tumis bawang putih hingga harum. Tuang saus tomat, saus sambal, bubuk cabe merah, garam, gula, gula, minyak wijen dan kaldu ayam. Aduk dan didihkan lalu tuang tepung kanji yang telah dicampur air. Didihkan lagi hingga mengental, segera masukkan potongan ayam goreng dan campur rata selama 20 detik. Angkat dari api dan sajikan di sebuah piring. Sajikan segera dihias brokoli rebus.)

      Thank you so much..yet if you want stronger taste, add some rice vinegar on it, I didn’t use any since I cooked this for lil one
