Beef Kidney and Broccoli ” Cah Ginjal Sapi Brokoli ” (Bilingual Eng-Indo)

Rare to use this part to cook, yet sometimes kind of missing it so bad. I love this dish very much, and the beef kidney dish reminds me so much about my childhood back in my home village. It’ s simply cooked with Chinese wine, yet I didn’t use any in this recipe, just simply cook it with veggies. Try it soon!

(Teman-teman ini aku share resep untuk bikin Cah Ginjal Sapi Brokoli. Meskipun punya kandungan kolesterol karena jeroan, ginjal sapi rasanya enak dan kenyal. Dulu waktu masih kecil sering banget makan ini di desa. Biasanya dimasak dengan arak Cina, tapi aku nggak pake arak di resep ini. Yuk, cobain!)

Ingredients:

– 400 Grams of broccoli –> cut and boiled for 5 minutes (brokoli –> potong sesuai rumpun dan rebus selama 5 menit, tiriskan )

– 200 grams of beef kidney –> wash and slice onto 2 part, remove the white fat muscle, lacerate the surface of the kidney with your knife (ginjal sapi –> iris menjadi 2 bagian, buang bagian lemak ototnya, sayat permukaan luar ginjal dengan pisau )

– 3 cloves of garlic –> bashed (bawang putih –> geprek)

– 1 small chunk of ginger –> peeled and bashed (satu ruas jahe –> kupas dan geprek)

– 1 onion –> cut onto 4 pieces (bawang bombay –> potong menjadi 4 bagian)

– 1 tomato –> cut onto 4 (tomato –> potong menjadi 4 bagian)

– 250 ml of  chicken stock (kaldu ayam)

– 2 tablespoons of soy sauce (kecap asin)

– 1/2 teaspoon of sugar (gula pasir)

– 1 tablespoon of sesame oil (minyak wijen)

– 1 tablespoon of vegetable oil (minyak sayur)

–  some black pepper (bubuk merica hitam secukupnya)

– 3/4 tablespoon of potato starch (tepung kanji)

Steps:

1. Heat your pan in high and pour in vegetable oil. When it’s hot enough, saute the garlic until fragrant. Put in the ginger, onion, tomato. Stir well. Put in the beef kidney and stir again for 2 minutes.

(Panaskan wajan dengan api besar dan tuang minyak sayur. Jika minyak sudah panas, masukkan bawang putih dan tumis hingga harum. Masukkan jahe, bawang bombay, dan tomat. Aduk rata. Masukkan ginjal sapi dan aduk rata selama 2 menit.)

2. Put in the broccoli and stir well. Mix the stock with potato starch. Pour in the stock mix, spice with soy sauce, sugar, and some black pepper.

(Masukkan brokoli dan bumbui dengan kecap asin, gula, dan bubuk merica hitam. Campur kaldu ayam dengan kanji. Tuangkan kaldu.

3. Boil for couple minutes until the stock becomes thick and bubbly. Pour in sesame oil and stir for 3 seconds. Move the dish to a serving plate and serve!

(Masak hingga kaldu mengental dan mendidih selama beberapa menit saja. Tuang minyak wijen dan aduk rata selama 3 detik. Pindahkan tumisan pada sebuah piring saji dan sajikan panas.)
