Easy Sticky Rice Cake “Kue Lemper” (Bilingual-Eng-Indo)

This is one of my fave snacks in Indonesia. Sticky/ glutinous rice filled with spiced chicken. The saltiness of the sticky rice combined well with the sweetness of the chicken. I ate this 3 at a time, and still wanted more..Well, try this simple recipe soon!

(Teman-teman, ini aku share resep bikin kue lemper yang aku coba kemarin. Karena malas masak ketannya dengan banyak langkah, aku masak ketannya dengan rice cooker biasa. Aku pake rice cooker Cosmos yang ukuran kecil. Beberapa bahan kayak daun pisang, daun pandan sama daun jeruk aku tiadakan karena susah carinya disini, tapi aku improvisasi dengan bahan bahan lain. Yuk, cobain!)

Easy Sticky Rice cake (kue Lemper)

Ingredients:

For the sticky rice: (Untuk ketannya)

– 300 grams of sticky rice (glutinous rice) (beras ketan)

– 1/4 teaspoon of salt (garam)

– 175 ml of coconut milk (santan cair)

For the filling: (Untuk isiannya)

– 400 grams of chicken breast (daging ayam bagian dada)

– 5 tablespoons of coconut milk (santan cair)

– 3 cloves of garlic (bawang putih)

– 3 cloves of shallots (bawang merah)

– 1 tablespoon od vegetable oil (minyak sayur)

– 1/4 teaspoon of lemon juice (perasan jeruk lemon)

– 1/4 teaspoon of salt (garam)

– 1/8 teaspoon of ground black pepper (bubuk merica hitam)

– 3 tablespoon of sugar (gula pasir)

Steps:

1. Put in the sticky rice in a bowl and pour in water covering the surface of the rice for 1 hour.

(Rendam beras ketan selama 1 jam dalam air bersih.)

2. Boil enough water to boil the chicken in a pot. Boil the chicken until it well cooked.

(Rebus air secukupnya dan masukkan ayam kedalamnya, rebus ayam hingga matang sempurna.)

3. Prepare your rice cooker, stain your sticky rice from the water and place it inside the rice cooker pot, pour in the coconut milk and salt, cook following the instruction of the rice cooker.

(Siapkan rice cooker, saring ketan dari air dan masukkan dalam wadah rice cooker bersama dengan santai cair dan garam. Masak hingga matang sesuai petunjuk masing-masing rice cooker.)

4. When it’s boiled, take out the chicken and let it cool completely. Then, gently shred the chicken onto thin slices. Chop the shredded chicken using your cleaver/ knife onto even small pieces.

(Jika sudah matang, keluarkan ayam dari panci dan biarkan dingin. Perlahan suwir-suwir ayam menjadi lembaran tipis kemudian cacah lagi hingga manjadi makin kecil dan lembut.)

5. Blend together the garlics and shallots using blender.

(Blender/ haluskan bersama bawang putih dan bawang merah.)

6. Heat a pan on medium and pour in 1 tablespoon of vegetable oil. Then, saute the minced garlic and shallot until fragrant. Put in the chicken, followed by lemon juice, salt, ground black pepper and sugar. Pour in the coconut milk and mix well, keep on stirring the chicken until the chicken juice and the coconut milk evaporated/ gone for approximately 5-10 minutes.

(Panaskan wajan dengan api medium dan tuang 1 sendok makan minyak sayur. Tumis bawang putih dan bawang merah hingga harum. Lalu masukkan ayam, perasan jeruk lemon, garam, bubuk merica hitam dan gula. Tuangkan santan cari dan aduk rata, tetep aduk aduk perlahan ayam hingga santan habis/ kering kurang lebih selama 5-10 menit.)

7. Prepare a small baking tray/ small casserole and start to build the cake by spread half of the rice on the surface of it with 1 cm tall. Take out the layer of the rice out and set aside. Repeat spreading the rest of the rice on the surface of the casserole/ tray with same size 1 cm tall. Then for the second layer, spread well the chicken. Top the chicken with the rest of the rice. Press gently for even surface, then slightly cut the rice cake the size you want. Serve it warm. You can cover the rice cake with baking paper for even easy handling. Enjoy!

(Siapkan baking tray/ casserole/ pyrex ukuran kecil, lalu bagi ketan manjadi dua bagian sama. Mula-mula masukkan 1/2 bagian ketan dan tekan-tekan di dasar tray/ casserole/ pyrex merata membentuk kotak dengan ketebalan 1 cm. Lalu keluarkan lapisan ketan dan sisihkan. Ulangi proses membuat lembaran ketan dengan ukuran yang sama dengan menggunakan sisa ketan yang ada. Lapisi ketan dengan tumisan ayam dan ratakan. Terakhir, tutup tumisan ayam dengan lapisan ketan yang tersisa dan tekan-tekan pelan. Potong kue lemper sesuai selera. sajikan segera. Yumm!)
