Simple Deep Fried Cake “Ote-Ote Porong” (Bilingual-Eng-Indo)

This snack is very popular in Indonesia, a deep fried cake filled with ground meat, seaweed, clams and leek. Many recipes come after this snack with different fillings and batter composition. Here is my simple way to make this crunchy bites. Yet, you’ll need big stainless soup ladle to make this.

(Teman-teman, ini aku share resep yang biasa aku pake untuk bikin Ote-Ote Porong isi daging, rumput laut, dan Bawang Prei ya. Isinya aku sesuaikan dengan isi kulkas aja, aku pake kerang ijo yang gede supaya puas dan karena nggak ada rumput laut basah, aku pake aja nori lembaran yang dipotong-potong kecil hehehe dan tetep enaaaak.. Ukuran dari ote-ote Porong yang kubikin ini kurang lebih diameter 7 cm. Yuk, cobain)

Ingredients: (yields: 9-10 cakes)

– 1 cup of all purpose flour (1 cangkir tepung serba guna)

– 1 cup of rice flour (1 cangkir tepung beras)

– 2 cups of warm water (2 cangkir air hangat)

– 2 tablespoons of oyster sauce (saus tiram)

– salt and pepper (garam dan merica bubuk sesuai selera)

– 1 tablespoon of vegetable oil (minyak sayur satu sendok makan)

– 300 grams of ground meat (daging giling pilihanmu, boleh sapi, boleh babi, boleh juga ayam)

– 9-10 green mussels (kerang hijau besar, boleh juga pakai kerang lain)

– 3 leeks (bawang prei)

– 3 sheets of dried nori seaweed (rumput laut kering, boleh juga yang basah)

– 1 tablespoons of soy sauce (kecap asin dua sendok makan)

– 1 tablespoon of fish sauce (satu sendok makan kecap ikan)

– oil for frying (minyak untuk menggoreng)

Steps:

1. Chop the leeks, cut the nori onto small pieces. Set aside.

(Potong -potong kecil bawang prei dan lembaran nori menjadi kecil kecil.)

2. Preheat a deep fryer with al lot of oil enough to fry the cakes on medium heat.

(Panaskan wajan berisi minyak agak banyak dengan api sedang untuk menggoreng ote-ote)

3. In a bowl, mix the ground meat with soy sauce and fish sauce. Set aside.

(Pada sebuah mangkuk, campurkan daging giling dengan kecap asin dan kecap ikan.)

4. Deep the big stainless ladle in the preheated frying oil for 4 minutes.

(Celup sendok sup yang digunakan untuk membuat ote-ote kedalam minyak goreng di wajan selama 4 menit)

5. In a big bowl, mix the all purpose flour, rice flour and warm water. Add oyster sauce, vegetable oil, salt and pepper. Mix well.

(Pada sebuah mangkuk besar, campur tepung serba guna, tepung beras dan air hangat. Masukkan saus tiram, minyak sayur dan garam merica secukupnya. Aduk rata.)

6. Take the ladle out the hot oil and add thin layer or flour batter on the base of it, tilt the ladle to spread the batter evenly. Quickly take 3/4 tablespoon of ground meat and put in on the batter, together with some seaweed, one mussel, and some leek. Finally, cover the filling with thin layer of batter again and spread it evenly using clean spoon. Put in the ladle back in the oil. Fry the cake and after 2 minutes, try to pry the cake from the ladle gently with spoon. Fry the cake until brown for about 7-8 minutes. Drain the excess oil from the cake by putting it on paper towel/ shieve. Repeat until the entire batter and filling are finish. Serve the snack with chili sauce or tomato sauce. Done!

(Ambil sendok sup dari dalam minyak panas,dan perlahan tuang 1 sendok makan adonan tepung di dasarnya, ayun sendok hingga semua bagian dasar tertutupi adonan. Perlahan letakkan 3/4 sendok makan daging giling, satu kerang hijau, rumput laut nori dan bawang prei secukupnya. Terakhir, tutup semua isian dengan adonan tepung tipis tipis (jangan terlalu tebal) dan ratakan dengan sendok bersih. Masukkan sendok sup kedalam minyak panas dan goreng ote-ote selama 2 menit. Perlahan lepaskan ote-ote dari sendok sup dengan menggunakan sendok bersih. Goreng ote-ote yang sudah terlepas dari sendok hingga matang kurang lebih selama 7-8  menit. Tiriskan dan sajikan panas bersama saus sambal, cabe segar, atau saus tomat. Yummm…! )
