Homemade Swedish Meatballs “Kottbullar” (Bilingual Eng-Indo)

This is my fave dish while having meal in IKEA for most of the time, the Kottbullar, meatballs with gravy sauce served with mashed potato and lingonberry jam. Well, let’s make this at home now!

(Temen-temen ini aku share resep ku untuk bikin Kottbullar yang biasa kita makan di IKEA, caranya gampang dan hasilnya maknyuz, yuk cobain!)

Homemade Swedish Meatballs

Ingredients:

For the meatballs (adonan dagingnya):

– 200 grams of ground pork (daging babi giling)

– 200 grams of ground beef (daging sapi giling)

– 1 tablespoon of potato starch (tepung kanji)

– 3 tablespoons of bread crumbs (tepung roti)

– 2 eggs (telur ayam)

– 2 tablespoon of heavy cream (cream cair)

– 1/2 teaspoon of salt (garam)

– 1/4 teaspoon of ground black pepper (merica hitam bubuk)

– 1/2 tablespoon of garlic powder (bubuk bawang putih)

– 1 teaspoon of shallots powder (bubuk bawang merah)

– 1/8 teaspoon of cheyenne pepper (bubuk cabe merah besar)

– 1/2 of onion (diced finely) (bawang bombay dipotong dadu kecil)

– 2 tablespoons of butter (butter)

Fot the Gravy sauce (untuk saosnya):

– 2 tablespoons of butter (butter)

– 3 tablespoons  of all-purpose flour (tepung terigu)

–  750 ml of hot beef broth (kaldu sapi panas)

– 100 ml of heavy cream (cream cair)

– 1/8 teaspoon of salt (garam)

– dash of ground black pepper (bubuk merica hitam secukupnya)

– 1/2 teaspoon of sugar (gula pasir)

– 1/4 teaspoon of Worcestershire sauce

– For the Mashed Potato (Untuk kentang tumbuknya):

– 4 medium potatoes (kentang segar ukuran medium)

– 1 tbs of butter (butter)

– 1 tbs of heavy cream (cream cair)

– salt and black pepper powder (garam dan bubuk merica hitam)

– chopped peterselie (peterseli cincang)

Steps:

1. Prepare the meatballs: in a sauce pan, melt the butter on medium heat and saute the chopped onion until fragrance. In a big bowl, mix all of the ingredients for meatballs, and put in the sauted onion to the meatball mix, stir well. Place in a plastic bag and fridge for 1 hour.

(Siapkan bola dagingnya: Pada sebuah panci kecil, lelehkan butter dengan api medium dan tumis potongan bawang bombay hingga harum. Pada sebuah mangkuk besar, campur semua bahan untuk bola daging dan masukkan tumisan bawang bombay, aduk rata. Masukkan adonan daging kedalam kantung plastic/ zip loc dan simpan dalam lemari es (bukan freezer) selama 1 jam.)

2. Prepare the mashed potato: Cut and boil the potato until they are soft. Then, strain them off the water. Place in a large bowl, mash evenly and put in the butter.  Mix the butter and potato evenly. Put in heavy cream and mix. Put in salt and pepper due to your flavor, mix again. Place in a warm place until you ready to serve the dish.

(Membuat Kentang Tumbuk: Potong-Potong dan rebus kentang dalam air mendidih hingga matang dan empuk. Saring airnya dan letakkan kentang dalam sebuah mangkuk besar, lalu mulai tumbuk hingga halus benar. Masukkan butter dan aduk rata. Masukkan cream cair dan aduk rata. Masukkan garam, peterseli cincang dan merica hitam bubuk sesuai selera, aduk rata. Simpan kentang tumbuk di tempat hangat tertutup hingga siap digunakan.)

3. Make the meatballs: Take the meatballs mix out of the fridge and begin to divide the meat onto 25 pieces with same size, round the meat onto balls.

(Buat bola dagingnya: Keluarkan bola daging dari dalam lemari es dan bagi menjadi 25 bagian rata, bentuk bulat-bulat seperti bola.)

4. Cook the meatballs: In a big non stick pan, begin to melt 2 tablespoon of butter and put in the meatballs, cook the meatball until done for about 10-15 minutes on medium heat while keep on rolling the meatball for even cook.

(Masak bola dagingnya: Pada sebuah wajan anti lengket besar, lelehkan 2 sendok makan butter dan perlahan masukkan bola daging, masak hingga matang selama kurang lebih 10-15 menit sambil terus di guling-gulingkan untuk proses matang sempurna.)

5. Make the sauce: In a big non stick pan, melt the butter on medium heat and directly put in the flour while keep on stirring to form small ball dough, cook for another 1 minute. Pour in the hot broth and keep on stirring for 1 minute. Pour in the heavy cream and Worcestershire and mix for 1 minute. Season with salt, sugar and black pepper. Bring it to boil.

(Membuat sausnya: Pada sebuah wajan anti lengket, lelehkan mentega dengan api medium. Segera masukkan tepung terigu dan aduk rata selama 1 menit hingga membentuk adonan. Tuangkan kaldu sapi panas kedalamnya dan aduk rata lagi selama 1 menit. Tuang cream cair dan saus Worcestershire sambil aduk terus selama 1 menit. Masukkan garam dan merica dan masak hingga mendidih.)

6. Put in the meatballs to the sauce and mix well. Cook for another 5 minutes.

(Masukkan bola daging kedalam saus dan aduk rata. Masak bersama selama 5 menit.)

7. Serve the Kottbullar: In a plate, put in the mashed potato, some meatballs and pour on some of the sauce. Don’t forget the Lingonberry jam. Serve warm! Yum..

(Sajikan Kottbularnya: Pada sebuah piring, letakkan kentang tumbuk, beberapa bola daging dan siram dengan sausnya. Jangan lupa selai Lingonberry-nya. Selamat menikmati!)
