Dumplings from Scratch (Bilingual-Eng-Indo)

Yesterday I made dumpling for dinner. I simply made the wrappers myself too. I came out really soft and smooth. Filled it with pork and some onion, these bites made my dinner!! Try it soon..

Yukkkk..)

Ingredients:

For the Wrappers (Untuk Kulitnya) :

– 2 cups of all purpose flour (tepung terigu 2 cangkir)

– 3/4 cup of hot water (air panas 3/4 cangkir)

– some salt (garam)

– some all purpose flour for dusting (tepung terigu untuk taburan)

For the Filling (Untuk isinya) :

– 500 grams of ground pork/ beef/ chicken (daging giling kesukaanmu)

– 1 onion  –> small diced (bawang bombay –> potong dadu kecil)

– 2 leeks –> small cut (bawang prei –> potong kecil)

– 1 table spoon of oyster sauce (saus tiram)

– 1 table spoon of soy sauce (kecap asin)

– 1 table spoon of fish sauce (kecap ikan)

– 1 table spoon of sesame oil (minyak wijen)

–  3/4 teaspoon of salt (garam)

– 1/2 teaspoon of black pepper (bubuk merica hitam)

– BAKING PAPER

Steps:

1. Make the dough for wrappers by mixing all of the ingredients. Mix well and knead the dough for 10 minutes until smooth and elastic.

2. Roll the dough to make big sausage shape. Devide the dough onto 20 pieces using knife.

3. Dust your working surface with little flour. Take one piece of the dough and start to flatten it using rolling pin onto thin sheet. Repeat until all the dough done. Cut the sheet onto circle with with diameter 10-12 cm.

(Taburi permukaan meja datar dengan sedikit tepung. Ambil satu buah potongan adonan dan gilas tipis. Ulangi hingga semua adonan habis. Potong lembaran kulit membentuk lingkaran diameter 10-12 cm)

4. Make the filling: Mix all of the ingredients well. Take one tablespoon of the filling and place it on the center of the wrapper, slightly press the side of the wrapper to seal it tight. You can also make small folding on it too.

(Membuat Isian: campur semua bahan isian.

5. Heat the steamer on medium with enough water. Better to use BAKING PAPER on the base of the wire and prick it with chopstick following the holes on the steamer pan to prevent the wrappers to stick. When it’s hot enough, place in 7-8 dumplings and close the steamer. Steam for 10-12 minutes. Take the dumpling out carefully and serve hot! You can fry them instead of steaming too..

Wow that dumpling wrapper looks good–smooth and thin! I want to try making this one. How hot is the water to use & how much salt to use?

Dear Mia, yes they have to be thin and elastic. I use hot water (not boiling, just hot) and use salt as mush as you like, a pinch will do good.
