Korean Spicy Seafood Noodle Soup (Champong)(Bilingual-Eng-Indo)

This is one of my fave dishes in Korea, Champong is spicy seafood  noodle soup served hot almost in every restaurant there. This dish is very popular and here is my way to make Champong, I found that making Champong, you have to have proper soup base, yet the flavor of the seafood is irreplaceable. I don’t have the authentic soup ingredients but this soup I tried came out really good yet it’s more simple. Here we go!

Korean Spicy Seafood Noodle Soup (Champong)

(Teman-teman ini  share resep membuat Champong yang sederhana. Inti dari masakan ini adalah sup nya, sup nya lebih baik dibuat dari bahan alami daripada sekedar air ditambah penyedap rasa. Aku nggak pakai resep asli sup nya karena bahan2 nya cukup sulit didapat disini, cuman aku pakai sup dari tulang daging biasa. Champong yang populer di setiap resto Korea ini ternyata simple sekali dibuat dirumah. Yuk, cobain!! )

Ingredients: Serving 2 Bowls (Untuk 2 Porsi)

For the Soup (Untuk Sup dasar nya):

– 4 litres of water (air putih)

– 300 grams of meat bones (I’m using pork bones) (Tulang daging boleh sapi/babi)

– 1 onion (bawang bombay)

– 3 cloves of garlic –> bashed (bawang putih di geprek)

– 4 cloves of small shallot –> sliced (bawang merah diiris tipis)

– 2 leeks (bawang prei)

For the Seafood and Vegetables:

– 20 fresh clean mussels (kerang)

– 100 grams of fresh shrimp (udang)

– 100 grams of fresh squid (cumi-cumi)

– 1 carrot –> cut onto sticks (wortel dikupas dan dipotong korek)

– 1/2 of zucchini –> cut onto sticks (zucchini di potong korek juga)

– 100 grams of mushroom –> cut (jamur dipotong)

– 1 onion –> sliced (bawang bombay iris panjang)

– 3 tablespoon of Red Pepper Flakes (or you can use Paprika/ Cheyenne pepper powder) (bubuk cabe merah besar)

– 1 tablespoon of salt (garam)

– 1/2 tablespoon of black pepper (bubuk merica hitam)

– 1/2 tablespoon of sugar (gula)

– 1 tablespoon of oyster sauce (saus tiram)

– 2 tablespoon of fish sauce (kecap ikan)

–  200 grams of Noodles (mie kesayanganmu)

– 1 leek (bawang prei)

– some sesame oil (minyak wijen)

Steps:

1. In  a large pot, boil the water and put it in all of the soup ingredients. Boil for at least 2 hours to get the stock.

(Pada sebuah panci besar, rebus air dan semua bahan untuk sup. Rebus hingga mendidih paling tidak 2 jam untuk mendapatkan kaldunya.)

2. In another pot, boil 2 liters of water. Put in the noodles and cook well. Drain and set aside.

(Pada panci yang lain, rebus 2 liter air. Masukkan mie dan masak sempurna. Tiriskan dan sisihakan.)

3. Back to the soup, after 2 hours, take away all of the filling and leave the soup clear, bring the soup back to boil. Put in red pepper flakes, salt, pepper, sugar, oyster sauce, and fish sauce. Cook for 10 more minutes.

(Kembali ke sup kaldunya, setelah 2 jam, keluarkan semua tulang dan bawang dalam sup hingga sup bersih. Masukkan bubuk cabe merah besar, garam, merica hitam bubuk, gula, saus tiram, dan kecap ikan. Masak kembali selama 10 menit. )

4. Put in the mussels, shrimp, squid, carrot, onion, zucchini, and mushrooms to the soup. Cook for another 4 minutes. After done, divide the noodle into 2 big bowls and pour them with the hot soup complete with the veggies and seafood. Sprinkle with cut leek and 1 teaspoon of sesame oil on each. Done!

(Masukkan kerang, udang, cumi-cumi, potongan wortel, bawang bombay iris, zucchini potong, dan jamur potong kedalam sup. Masak kembali selama 4 menit. Setelah masak, bagi rata mie kedalam 2 buah mangkuk besar dan tuangi dengan sup lengkap dengan isinya. Taburi dengan bawang prei potong dan 1 sendok teh minyak wijen dimasing-masing mangkuk. Sajikan! )
