Tripe Soup Noodle “Mie Babat” (Bilingual-Eng-Indo)

Here is my own way to make one of my husband’s fave dish ever, “Mie Babat”. Common egg noodles served with cow’s internal tummy part (we call this “Babat” in Indonesia). It seems weird but it is so yummy and they produce special unique scent and flavor in the soup. Let’s see and try it yourself!

Ingredients:

– 300 grams of clean white beef tripes (babat)

– 3 liters of water (2x) (air putih: sekali untuk merebus, sekali untuk membuat sup babat kuah)

– 1 onion (bawang bombay)

– 3 cloves of garlic -crushed (bawang putih-dikeprek)

– 3/4 tablespoon of salt (garam)

– 1/2 teaspoon of pepper (merica bubuk)

– 2 tablespoon of tomato ketchup (saus tomat botolan)

– 1 tablespoon of sugar (gula)

– 2 tablespoon of soy sauce (kecap asin: untuk sup)

– egg noodles (mie telur)

– some vegetable oil (minyak sayur)

– some leek (daun bawang)

– some fried onions (bawang goreng)

– some soy sauce (kecap asin: untuk membumbui mie telur)

Steps:

1. Wash the BABAT clean under flowing water.

(Cuci babat bersih-bersih dibawah air mengalir.)

2. Boil 3 liters of water in a pot. Put in all of the babat when it starts to boil. Boil the BABAT until they are soft and tender for about 2 hours.

(Rebus 3 liter air dalam panci dan masukkan babat kedalamnya, jika air mulai mendidih. Rebus selama 2 jam hingga babat empuk benar.)

3. After they are soft and tender, take the babat out of the water and throw the water away.

(Setelah babat empuk, keluarkan dari dalam air, dan buang airnya.)

4. Boil another 3 liters of water in a pot. After it’s boiled, put in the BABAT.

(Rebus 3 liter air dalam panci dan masukkan babat ketika air mendidih.)

5. Put in the onion, garlic, salt, pepper, sugar, soy sauce, and tomato ketchup. Cook for another 30 minutes.

(Masukkan bawang bombay, bawang putihm garam, merica, gula, kecap asin, dan saus tomat kedalam sup. Masak selama 30 menit.)

6. Boil another 2 liters of water in another pot to cook the egg noodles. Put the noodles in when the water started to boil, cook until the noodles soft.

(Rebus 2 liter air di panci berbeda untuk merebus mie telur. Masukkan mie jika air mulai mendidih, rebus hingga mie lembut.)

7. In a large bowl, mix together 1 tablespoon of vegetable oil, 1 table spoon of soy sauce, little salt and some black pepper.

(Dalam sebuah mangkuk, campurkan 1 sendok makan minyak sayur, 1 sendok makan kecap asin, sedikit garam dan sedikit merica.)

8. Put in app. 100 grams of noodles into the bowl and mix it with the seasoning well.

(Masukkan kurang lebih 100 gram mie yang telah direbus kedalam mangkuk dan aduk rata dengan saus kecap diatas.)

9. Move the seasone noodles into new clean bowl and put in some of the BABAT, some leek, and some fried onions. In another bowl, pour in the BABAT soup. Serve hot!

(Pindahkan mie yang telah dibumbui kedalam mangkuk baru dan beri beberapa babat, daun bawang, dan bawang goreng. Di mangkuk berbeda, tuang sup babatnya. Sajikan panas!)
